This recipe is so awesome! I made so many alterations and messed up a bit but still these muffins are soooo delicious. I used oil instead of butter, added just 50 grams of sugar, added whole wheat flour, all of which made my batter really thick like cookie dough and so I added half a cup of yoghurt and I just went with it. And wow they’re still so delicious! No matter how much you mess up, Joy of Baking’s recipes don’t let you mess up.
A fave of mine. Love these w/a brown sugar/butter streusel on top too! You’ve been speaking to my heart w/the banana recipes you’ve posted these last few months 😊. I don’t really eat bananas on their own, but oh how I love banana desserts & pastries! Nature’s best sweet treat. Thanks for consistently sharing easy, delicious, uncomplicated recipes. Stephanie,I just made your banana muffins and the 12 muffins just came out of the oven,they turned out perfect and the banana muffins taste really good with the toasted walnuts that I put in the batter.These muffins are a keep,and my mom also enjoyed eating the muffin,she says these muffins tastes really good

I juuuuust made these. They are DELICIOUS! I left my sister to watch them and stepped away. I came back 10 minutes later and she ate 4 and they aren't even cool yet. I got 18 muffins and I added raisins and oats instead of nuts. Thanks Joy

Stephanie I made your chiffon cake recipe twice and and both the times it came out amazingly soft and moist it was so spongy the texture was unbelievable. You explain the things so well that I am really mere beginner in making sponge cakes still it came out perfect 😄

Really good video/easy to follow and no silly and unnecessary 'side stories' or annoying background 'circus music'. You obviously know what you are doing :) The only thing I might ask for, is to show what 'toothpick comes out clean' looks like/vs when they are not cooked enough. I think people would find that helpful/won't take long to add this. Thx for the good video Stephanie.

I've finally made these today. Oh my goodness, they are so good. I forgot the nuts.🤣 I ate one after they got out of the oven. Oh Hot! Duh me. Ate another one when they were lukewarm. Wanted to try the muffin version for some time,as a banana bread lover why not give this a try.I was hesitant in adding the cinnamon & vanilla extract but decided go big or go home.Sorry never was a big fan of adding nuts into this however i used margerine instead of butter other than that i followed it to a tea.All i can say is WOW,smells great in the oven (Vanilla & Bananas) Cinnamon you can taste but not over powering. Will be making more :) P.S. Now a Orange Chocolate Chip Bread video would be awesome !

I also added some fresh blueberries which i had in my fridge. They turned out so delicious as usual like your all other muffins recipes I followed in the past. Cause they look very similar as mine ! i use parchemin paper liners to make my muffins and its so easy to take of your muffins ! Instead of the nuts, i would put some poppy seeds or dark tiny chocolate chips in it - my favorite ! So i'll try to make them soon ! have a good day !

I've never actually used coconut flour or spelt flour so I can't say how they would work. But you could use whole meal flour instead of all purpose flour.
Hi Stephanie, may I ask if you’re using a convection( with fan) or conventional oven because I think the cooking temperature differs for both types of oven. Should we bake with the fan or without the fan? Thanks in advance ❤️.
Why did you change the amount of sugar in your other recipe? In the other short recipe you put 1 cup of sugar instead of 3/4 cup of sugar, why is that and does it change your recipe? It doesn't change how how I love watching and cooking with your recipes. And I did use your recipe for making banana muffins with chocolate chips and everyone at home loved them. Thank you so much for sharing your talent and great expertise, it's delish. 😀

I freeze bananas when they start to go brown. Works perfectly. You can make muffins anytime.
Yum! I love any recipes that help use up overripe bananas. I'll sometimes make banana muffins with oat bran, which ups the fiber content.

I would use the fan if you have one. Check your oven’s manual to see if a temperature correction is needed. Newer ovens don’t require a correction.
