      Same finally the internet has use to let me learn things i havemt been taught because fast food easy meals seemed the only option to my hard working dad my mom is not polish But her and my grandma would show me to cook

    Anna, I love the commentary while you made this dish...I have dreamt of kapusta zasmazana since an elderly Polish woman made it for lunch at a Legal Aid Clinic...I was drawn to the smell of it cooking and could not leave until I tried it.

    I want to mention a funny language thing that had to do with that core of the cabbage. My family are Russian speaking Ukrainians and in Russian they call that cabbage center “Katchaan” (Качáн). Could be some Turkic word. The word is absolutely different from the Polish word for it, but actually it is also used to refer to some people as knuckle-head, dummy, noggin’ etc. meaning some stubborn or dumb person’s forehead or top of the head.

    Hi Anna, I love your tutorials. My Polish relatives made similar version of this. Instead of dill a little sugar was added to make it sweet- sour. Some used equal parts sugar and vinegar, others made it more sour. We always had this with holiday meals and frequently in between them.

    I'm new to your channel. Thank you so much for for these videos. My Great Grandparents were from Warsaw. They passed away before I was born. My grandfather was Polish. So, very few foods were passed down and the language barley spoke because of my great grandmother. I'm the only one who took interest In the foods and now the only one who can cook the food. So, I'm learning from you. So I can pass these foods down in the family and our heritage is never lost. Learning from you I fill like I'm honoring my heritage. Having a book is great but im old school. Seeing it perpaired much better. Its like when i make my polish soup. You have to see to fully understand and appreciate. Thank you so much for these post....

    Love your videos! Thank you. My Polish American mother would make a huge pan of this for parties, usually mixing it half and half with cooked buttered wide noodles, to which were generously added garlic and more cracked pepper. Not sure what it was called other than Cabbage and Noodles.
    Would love some desserts, if you would please make czarlotka and makowiec?

      We grew up calling cabbage and noodles "Halushki". It's a Pittsburgh Pennsylvania staple. Found in all of the supermarket delis.

    Cabbage and bacon = marriage made in heaven. The nutrients from cabbage help digest the fat from bacon with (some people say) no side effects. The same goes for cabbage and pork knuckle. Both are delicious.

    It took me almost 15 minutes to realize that my mom used to make this dish. It took that long because while you give the cabbage a fine dice, mom's idea was a rough chop. Also, she didn't use any spices, but like you finished with bacon, onions, and roux. I'll try my hand at it!

      Yes, skip bacon, just brown the onions a bit more to mimic the look od bacon bits and bring a bit of smoky (burnt) flavor.

    I come, originally, from an area of the midwest that had many ethnic Polish & Hungarians Although my paternal grandmother was first generation American, she never cooked Polish dishes. Enter my best friend whose family was Hungarian & his mom cooked any & all things Hungarian & Polish.
    What I learned to cook from her, among other things, is fried cabbage & noodles. To this day it is a fall staple at my house when the cabbage crop is ready. I still make my own fresh (not smoked) Polish sausage because I can't buy it locally.

    I just found your program. I love watching you polish recipes. would have been nice to have a CLOSE UP of what the Cabbage looked like when it was finished.     If you put the spices into a cheesecloth and then add them to the dish, they are very easy to fish out.
