Usually we make the sauce with the of cuts -trimmings of the raw material( when you break it down for portioning) and a good stock , and obviously some other ingredients as per desire ,like wine , herbs , spices ect .
One Correction the word obergine is used by the chef frequently. In English for that ingredient we have the word eggplant 🍆 and the word obergine is French. Usually English speakers dont understand French. Otherwise that is a great dish you present. Some improvement in the English only

@unskeptable something not balancing so much between fancy version of a simple dish. Look at Fallow, one star, amazing food but nothing fancy. Cuttlets and melitzanosalata in a squirt bottle with purple flowers is not the type of food I prefer.
