      Cool it for 5 minutes at room temp and then throw it in the freezer. No need to run it in the colander.

      We Promote cooling it in water as you can get the temperature down on the rice in minutes. Leaving it to cool takes longer and bacteria can form in the rice.
      When training we was taught to cool it as quick as possible because Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. The spores can survive when rice is cooked.
      If rice is left standing at room temperature, the spores can grow into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea.
      The longer cooked rice is left at room temperature, the more likely it is that the bacteria or toxins could make the rice unsafe to eat.
      You can get food poisoning from eating reheated rice. It's not the reheating that causes the problem, but the way the rice has been stored before it's reheated. That’s why we cooked it down in water as it’s the quickest way at home.

      @@trylessmeat8456 A good way to store rice is in the freezer.
      Just after cooking the rice, let it cool for 10-15 mins Ideally on a sheet pan, then put it into a container and pack it lightly but tight so there isnt a bunch of air, then freeze. Reheat as necessary.
      I think the problem with cooling down the rice by using water is that it will impart add more moisture to your rice which isnt always wanted as it might make your rice soggy.

    Thank you! Is it true cooked rice starts to grow stuff on it after some hours pass? Is there a good way to sterilize it after taking it out of the fridge?

      Dormant bacteria (spores) called Bacillus cereus can be found lurking in uncooked rice. The bacteria transfer to the rice from paddy field soil and their spores last for years, even surviving cooking. But when cooked rice is left at room temperature, the warm, damp conditions awaken the bacteria and they produce toxins that can cause vomiting and diarrhoea.
      The trick is to serve and eat rice as soon as it has been cooked. If you do need to keep it for a later sitting, cool it as quickly as possible and transfer straight to the fridge or frezzer.
      You can’t sterilise the rice as the bacteria can survive cooking temperatures. It’s all about the prep of the rice.

    If you were making a rice dish with other ingredients like chicken and veg to meal prep could you put them in a container together in say a sink of cold water to cool them all down together at the same time before putting in the fridge? or would u cool the rice down separately then mix them together? ☺️

      It always cook the rice separate and then mix the rice with veggie etc after both are cold. If you wash the rice with the veggies together, you can lose flavour.

    Doesn't the rice end up soggy? What i do is put the hot rice on a big plate or tray, then point an electric fan directly at it at full blast while folding the rice untill room temp, then tupperware it up in the fridge.

    I’ve been meal prepping chicken and rice for a while and I can’t figure out why it always goes all dry and hard and sticks together in chunks and it’s just awful go eat, any tips please?

      u can try coating ur rice in a tiny amount of oil to stop sticking or store chicken seperate from the rice if u don’t already.
