Today (11/oct/23) I did this recipe as per her measurements and instructions. I used large eggs; only half of ¼ tsp of salt; fine grain white sugar, silicone pans. My cupcakes (12 medium + 12 mini) turned out fluffy (airy and springy); taste wise are low in sugar; IMHO it could use a little more orange zest to really have orange flavour. Bottom line: we recommend this recipe. 😋 To whom it may concern, here my suggestions for the many questions unanswered by the baker: CAKE FLOUR, 120g --> 16 g *corn starch* + 105g *all purpose flour*. Sift them together 2-4 times to mix very well. [Cake flour == low protein = less gluten = softest texture = great for soft cupcakes! ] CASTER SUGAR is *extra fine granulated white sugar*. It's sold under that exact name next to the *coarse grain* and the *fine grain* white sugars. At home: use a food processor to make caster sugar out of regular white sugar by pulsing it 1-2 times at the most. Pulse too many times and you'll end up with icing sugar. OVEN TEMPERATURE: pre-heat at *160°C* and bake for 18-20 min, then lower to 150°C and continue to bake for 10 minutes more. These oven settings will give you a very pale cupcake bottom. I set my electrical oven to *160°C* (conventional heating top and bottom) and set a timer ⏲️ for 30 min. At minute 20 the house started to smell like baked cake, but the stick came out moist... I only took them out of the oven at minute 27: it was a too late, as the cupcakes had overcooked by 2-5 minutes -- the bottom was light amber in color. Therefore, I never got a chance to decrease the temperature to 150°C.

I don't think it said to reduce the temp. I paused the video. They're giving us 2 different bake temps and baking times. At least that's how I read it... 🤷♀️ Edit... Am I able to use this recipe and then change the orange to strawberry? Would I be able to use freeze-dried strawberries instead of the zest and do strawberry juice? Or should I not use strawberry juice?
Normally when I was taught baking not to use it because you can’t control the salt however if you do just skip the salt in the dry mix is what I was taught at least
Did anyone besides the creator make these? To me the sponge looks like pound cake in a cupcake form. Now there's nothing wrong with pound cake but when I make cupcakes I like for the crumb to be less dense. I've been looking for that type of an orange cake or cupcake recipe for some time now but have yet to find one. If anyone knows of a recipe can you please share a link? Id really appreciate it...

Then the waste of all those ingredients and your time 🧏♀️ What also doesn't make sense? I use salted butter so would that make a difference and would it change the structure?
