The fried tofu is a must anytime im in a restaurant. What i like to do is plug a herb leaf, squish it to a ball, dip that ball in the shrimp paste and shove it inside tofu. You don't want to dip the tofu in the sauce if you're not familiar with it for he sauce is really strong and salty.
that yellow veggie is called "bong dien dien" and it can only be found in the mekong delta. the "mam' dish is also originated there. at 14:19, it's the lotus root. at 15:28, it's very likely "ca tra". It's farmed raised and it's similar to catfish. In some places, it's "ca bong lau" which is wild caught and tastes a bit better. the menu didnt state what fish it was.

it’s alright to cook only fish seafood and tofu and beef in that hot pot but chicken and pork don’t why? stomach ache food poisoning You need to cook separately and must cook through
