The most important thing in the work with honey, and for consumers, is not to heat it above 40 degrees. Above this degree number, active substances such as various enzymes begin to be destroyed.....

Would it be ok to cut before it completely hardens to avoid cracking?

hi, your recipe is something I frequently make a home during winters. I make use of jaggery and a small pinch of baking soda once the jaggery has melted and reached one string consistency. I check this by putting a drop of melted jaggery in a bowl of cold water and then throwing the drop on the table surface. Once I hear a hard sound I add the rest of my ingredients and line it on parchment paper. I have never used honey , but would like to know why is honey used /

The parchment paper is a must have or else it will stick to everything lol. Also, it's hard, almost like peanut brittle, so be careful.

Butter or grease the parchment paper. Mines almost stick without it.

This recipe is how I found you tonight. I bought some Amki brand sesame thins made in Poland at my grocery store today (also Halvah & ginger chews) They're all so delicious I thought they must be very easy to make. So now I've spent an hour watching your videos and I'm going to subscribe!
Thank you very much, it's nice to have found you. I love your recipes. BTW I live in Colorado.

I saw a recipe that works but is not as hard/crunchy. Use the sesame seeds un toasted, and with the brown sugar (50grams,)use one egg white. Then bake 15 minutes at 180*/350*f

I tried this with sunflower, pumpkin seeds, broken cashew, almond slices and black and white sesame seeds. Yummy. I also added 1 tsp of liquid glucose to the brown sugar and honey and the texture turned out less brittle, much kinder on my teeth.
