I would have liked to see how the 3rd point influences the curvature, or how it could be applied

So with Tangency set in Match Curve, the first two points are parallel between the matched curves. With Curvature set in Match Curve, the first two points are parallel as in Tangency, but the Curvature also extends the smoothness further away from the ends of both curves. Both Tangency and Curvature have the Position option met as well by making the two curves' first points meet in space.
The interest in using Tangency when you want to match two curves together is the nuance in how Tangency will preserve the 2nd curve's Y distance in space, compared to Curvature, which just seeks to create a smooth average between curve 1 and curve 2, which might not be what you want when creating the cross section for a car hood, where there is an indentation in the metal, compared to a smooth curvature that you would get from matching both curves of the cross section with the Curvature parameter set.

@Pc Sim would you be so kind to upload a video about curve fairing techniques for quality surfacing? That would be much appreciated. Thx!
