Piaya Ng Bacolod Gawin Natin Sa Ating Tahanan! Napakadali At Walang Special Equipment Na Kailangan!

- Piaya
Piaya or Piyaya is one of the popular delicacies of Bacolod. This is the best pasalubong you can give to your friends and families. Piaya is an unleavened flat bread; there is no yeast or baking powder. The dough is simply made of flour, water and shortening. It is filled with a ball of muscovado sugar and it is cook in the griddle over low fire. You can also fill the piaya with Ube and Mango filling. This recipe is so easy that you can make this at home using a frying pan and you can make your own twist.
Dough:
Version #1
2 cups all purpose flour
1/2 tsp salt
1/4 cup cooking oil(Minola Coconut oil)
1/2 cup water
Version #2
2 cups all purpose flour
1/2 tsp salt
1/2 cup margarine, softened but firm to touch
1/2 cup water
Muscovado filling:
1 cup all purpose flour
1 1/4 cups muscovado sugar
1 1/2 tbsp cooking oil
2-3 tbsp water(more if needed)
Ube filling:
1 cup Ube Halaya
1/2 cup all purpose flour(more or less)
*add sugar if you want it to be sweet

Im from Bacolod, I suggest po (based sa mga piaya na nabibili dito) kapag magluluto po ng Piaya mainam na damihan ang filling. Yung tipong mapapaso yung dila mo sa unang kagat. Yun po ang the best.
Tsaka po pala dapat medyo may thickness ang piaya hehee keep safe.

You know what, Red Bean Paste, White Bean Paste, Monggo Paste has the same texture as the Ube Halaya. I bet you can use those as a filling in piyaya too. You can also add Pandan extract to the white bean paste to make a pandan flavour.

Hi chef, thank you so much for the recipe. Planning to make these as a treat to my future guests at home. How should we store it in order to retain the texture? Pansin ko pong kumukunat siya the next day. Should we have it fully sealed po or okay lang sya ilagay sa ordinary container with a lid? Planning to put it in a fully sealed ziplock pouch po pero baka po yun po yung magpapakunat sa kanya.
