Digging straight down not necessarily bad, on my server of co-workers i make small bets on digging straight down while in full gear and inventory. I've only dropped into lava like 3x out of like 50 or so times ive done it. In all honesty with the spyglass now just use sodium instead of Optifine. It increases the FPS to a ridiculous degree and now in combination with Iris will also run shaders.
Plus there's a bunch of fabric mods that allow you to use zoom and dynamic lights with sodium, the only reason to use Optifine is that some texture packs only work with Optifine

Mending on my bow for sure. I have a mob farm that produces more arrows I can store anyway, and I don't often need to shoot more than 2 stacks of arrows, so I'd prefer to not go through the trouble of enchanting a new bow.
In late game you will have an ender chest with shulker in it so just need some stack of arrow in a shulker to have a big ammo stock and still it uses only 1 inventory stack

Rotten flesh is actually really good to heal health super fast, think about it When you max your hunger bar, any extra points will go straight to your health bar, then the hunger takes half a hunger away and you can eat another, instantly healing 2 hearts, rinse and repeat till full health is reached

I choose mending on my bow because I completely maxed it out on enchantments, have an xp farm, and have two villagers who trade me 20 arrows for emeralds. Because I have a huge semi-ajtomatic carrot farm that gives me over 10 stacks of carrots to trade for emeralds each time, it just makes sense.

Rotten flesh is actually really good to heal health super fast, think about it
When you max your hunger bar, any extra points will go straight to your health bar, then the hunger takes half a hunger away and you can eat another, instantly healing 2 hearts, rinse and repeat till full health is reached
Here are reasons that I can think of for doing this
0:17 if you only need one and want to save time (tho I do think no one should do this)
0:44 if you need a potion once and never again, you don't have glass, or you don't have a source of water nearby

@Your Mom Didn't Love you they have over a dozen players and they go mining all over the map. I'm guessing there's a diamond vein in the majority of chunks at either y5 or y11 so it should be pretty easy if at least 1 person is mining almost 24/7 for a year or longer.

I choose mending on my bow because I completely maxed it out on enchantments, have an xp farm, and have two villagers who trade me 20 arrows for emeralds. Because I have a huge semi-ajtomatic carrot farm that gives me over 10 stacks of carrots to trade for emeralds each time, it just makes sense.
Since 128 stick can be traded to 64 arrow, you're right
And in late you'll have enderchest with shulker box for arrow stock in case of big adventure
