Had my Everyday V2 only for a few weeks, but I agree with most of your observations. I think the dividers are a jack of all trades, master of none. I use it for everyday carry, with only one DSLM with lens attached, and other everyday stuff. For that the system works great. But I would not want to use it as a real camera bag with a couple of lenses, and also I would not use it for hiking. One bag that you could take a look at is the Compagnon Element, that one is much more comfortable. It has a camera cube opening to the back, but also a quick side access flap and a huge daypack for other stuff.

How this: I used the version for 7 years before it started breaking, and since there's a lifetime warranty, I received a version 2...now it's like 2 years in the version so i expect to last at least a 5 years.
I liked the shelf system with the side access right up till I forgot to zip the pocket all the way. I and slung it onto my back and heard my zoom lens bounce off the pavement and cried. Now I use camera cube bags that access from the strap side, can’t put it on without zipping it up.

I took out a shelf and installed a camera cube that holds a body with 2 lenses. Very secure. I don’t like the origami shelves. And, I find it too difficult to use it like a sling that Peak brags about.

The think i would like is a way to try out bags for a shoot day before buying them. I have a weird set of gear that I like to use and it not always clear what will and won't work well. I have a manfrotto that is good enough but it's far from perfect.
