It's also known as a Hitchcock zoom if you do it in reverse (that is, walk forward while zooming out). Alfred Hitchcock LOVED these shots in his movies.
Ive done the dolly effect on my phone before, but you start zoomed in and then zoom out as you get closer to the subject. Thats what makes the background bigger and makes it the dolly effect

There’s actually a way to just slide the zoom if you zoom in/out using pinch it’ll bring up the 0.5 and 1x zoom icons and if you slide one finger over that it’ll switch to a little slide zoom. just thought that might’ve been easier
I think you can achieve the same effect by changing the focal length of the camera but keeping the subject the same size by cropping. this should require no movement at all, you'd need a very high res camera tho edit: My bad I was thinking in blender, and thinking changing f stop as well, irl that would just blur the subject lmao
It's actually more complex. Because the "dolly zoom" effect often involves changing the perspective focal point, so the perspective actually changes a lot. It's not just going backwards, you can also go forward TOWARDS the subject, while making the background seemingly go FURTHER. That is done by increasing the FOV by zooming OUT, bringing the focal point more close to the lens, while keeping the subject in focus. That requires truly professional knowledge and really steady hands and professional skills to pull it off. You see, if you zoom out, it actually changes how far the vanishing point is, which changes how the perspective works.
I've done this before accidentally. Was zooming the camera simutaneously while walking backwards slowly and moving my arms carefully in the direction necessary for the shot; and got the dolly effect with great results. It's a dang shame that video is on an old phone that doesn't work anymore... I don't have anymore. Someone should try it though, if curious. You'll get great results, based on my experience of it. Just be steady and stable as you move. Tricky, but doable.

The first example you show is the opposite. The camera zooms out as the cameraman walks in. Anything that has optical zoom can do it and the effect comes from the fact that as you increment the focal length the background compresses. If you have a zoom lens with a large zoom ratio, you can make the effect very pronounced.
If it's easier to do this while walking forwards then just record using the reverse recorder and that way you walk towards the object and can zoom out maybe, not sure if that would give the same effect
You can do the iPhone shot with only one hand… when you zoom you can activate a something like a wheel (where the zoom number is showing) and it’s easier and smoother
Here’s how I thought it was done; 1st shot- film the background and zoom out, don’t walk back, just zoom out. Shot 2- film zooming in on the subject and remove the bg, add shot 2 onto shot 1 and you have a finished result of the subject getting bigger, the bg getting smaller

its possible without edits at all on a regular phone camera, what i do is that i max it out to 6x first, then i zoom it back to 1x, and in the same time i drag the camera closer to the material being captured
Or you can use your thumbs to "unpinch" on either side, holding your phone with the bottom of your fingers or top of your palm. Or you can use the zoom function pop-up.

Might be able to smooth out some of the bumps by staying off your heels when moving backward. Worked great back inn marching band days for me.
