    Matcha powder has the ability to attract moisture
    So when I make matcha Génoise
    I always sift twice in advance
    Between flour, matcha powder
    It's going to be fine
    The finished cake will be refrigerated for a day
    If you eat it, the scent and moisture will spread evenly
    You can eat it more deliciously
    I'm good at sucking smells

    Génoise
    ( high 15 cm circular frame 1EA, 1 cm 4EA)
    white egg 90g
    egg yolk 60g
    sugar 90g
    cake flour 92g
    green tea powder 8g
    butter 30g
    milk 45g
    honey 10g
    * Keep the egg whites cold in advance.
    ① Prepare butter, milk, and honey in advance.
    ② Prepare by sifting green tea and flour.
    ③ Please make 90% meringue.
    ④ Mix the egg yolk in 3.
    ⑤ Mix in the sifted cake flour.
    ⑥ Add a little dough to butter, milk and honey heated to 50 ~ 60℃ and mix.
    ⑦ Pour it into the spatula to keep the foam from bursting, then mix.
    ⑧ Based on smeg, 165℃/30 minutes~ Grill.
    (The temperature and time of baking may vary depending on the oven.)
    ⑨ Beat the grilled Génoise on the floor, then turn over to cool.

    Water 20g
    sugar 10g
    kirsch(liquor) 3g
    ① Melt sugar and water in a microwave.
    (If it's too warm, the moisture will fly away and sweet, so heat it to the point where it melts.)
    ② When it is hot, add the liquid and mix.
    * Cool enough to use.
    Cream
    heavy cream 290g
    mascarpone cheese 45g
    sugar 22g
    kirsch(liquor) 3.6g
    ① Lightly mix mascarpone cheese and sugar.
    ② Please mix the heavy cream together.
    ③ Add the liquid and mix.
    ④ Whipping to about 50%.
    cream for sanding
    200g
    ① Use a firm whipping to secure the cake.
    (Be careful if you whip too much, it will come off.)
    matcha cream
    heavy cream 75g
    matcha powder 3g
    ① Mix together chilled matcha powder and whipped cream little by little.
    icing cream
    70g
    (You can use the remaining cream without measuring it.)
    It can be stored in the refrigerator for up to 2 days
