WOW, I did not realize you do not have to stir in the gelatin. I believe the term you were looking for what the gelatin does in the water during that rest period (which is also a nice way to say it) is it "blooms." I am doing a fast right now, but as soon as I am eating again for a week or so (one must resume eating carefully after a longish fast) , I will make this. It helps to use way less xylitol in recipes. I cut the xylitol in half or better with stevia as this really helps mitigate that sucky sweetness from sugar substitutes. This way you don't taste the stevia either.

Why did soooo many American schools stop teaching Home Economics? A total travesty. (I wonder: did the fast food, frozen dinners, and packaged lunches industry encourage or pay them to? hmmmm) At any rate, it was an awful decision to do that, a total travesty. Argh !!!

admmontoya I haven’t tried it with agar agar but agar is much more powerful in strength so you will have to use less though you might not land up with the same texture either as agar works very differently to Gelatin but it might work out ...halve the amount of agar agar ...cheers

Do you think these could be pressed into silicone molds? I’m thinking it would be kind of fun to make Halloween shaped marshmallows for kids and I wondered if I frozen them and then poured melted chocolate over them if I could make an interesting treat with chocolate on the outside and marshmallows on the inside. I make my own sugar free homemade chocolate bars and chocolates. And I just think chocolate on the outside would be a nice addition. 🥰
@@ketokat333 awesome what I’m thinking is putting them into molds I have these round happy face molds and then here’s the next experiment if the molds are successful popping them out and putting them in the freezer until they are solid and then pulling them out and either dipping them in chocolate or pouring chocolate my thought is the chocolate will harden when it hit the frozen marshmallow and then you’d be left with something similar to those chocolates with marshmallow in the center similar to those chocolates filled with marshmallow that we had as kids? I don’t know if it will work but if it does I could also make those “cookies” similar to the ones with a cookie with marshmallow in between and chocolate all over the outside. Wagon wheels I think they were called? Plus another creation could be the cookie on the bottom with jam on top and marshmallow on top and then chocolate covering the entire thing? I think the trick would be to have the chocolate at the perfect temp and the marshmallow frozen solid. Has anyone ever tried anything like this? No sense trying to recreate something that just won’t work?

There’s no reason for it not to get thick if you have used the correct amount of Gelatin …plus it will thicken even more in the refrigerator….do see the video step by step …it should work x
I was JUST going through my mother's "Maria Mole" (ma-ree-uh maw-lee) marshmallow recipes thinking how much I miss them! We Brazilians love our sweets and make homemade marshmallows. I was wondering about making them keto and then while scrolling through your videos tonight found this! Am going to make them tomorrow! By the way, homemade marshmallows are VERY overpriced at our Farmers Markets and sell for $5 EACH, the same size as yours! Sugar is cheaper than our keto sweeteners so you could get more than $5 each. lol
Update: I did exactly the same with all same ingredients except for the sweetener. The video states "... any sweetener of your choice." We used non-GMO Xylitol. We also tried organic Erythritol & Stevia blend. Both batches, unsuccessful. Here's the payoff for being positive: I ended up adding organic unsweetened desiccated coconut AND after refrigeration... OMG my Mother's "Manjar Branco!" It's even better than having the marshmallows!!! I added a bit of heavy whipping cream and aside from not having the sweet sugary syrup for it (similar to flan), it's authentic, delicious AND sugar-free! You'd swear it's sugar-laden!!!! Thank you pretty lady! I wish I could post the pics for you! 😍🙏 🙈😂

Mine turned out as a jello consistent blob. Is my gelatin too strong? I whisked it for 10 minutes and tried longer, but it just turned into a blob. What am I doing wrong? Thank you!
Mary A don’t worry about it ...just melt it and try again ...you just need to reach the right consistency as shown in the video ...almost like soft peaks ....and even if it’s turned into a blob ...put it into a container and press it down as shown in the video with a spatula using a little hot water on the spatula ...cheers

These are keto /low carb marshmallows so I wouldn’t use sugar at all ...xylitol is a sugar substitute...I think coconut sugar would work too though I don’t use it as I’m low carb x
So some sweetners don’t dissolve properly with hot water and still form crystals so in that case use a powdered sweetener (this happens with erythritol ) while some sweeteners dissolve easily so use it accordingly and adjust the sweetness by tasting the water and add a wee bit more or less x
Gwen Wilson Gwen Wilson maybe the strength of your gelatin so carry on whipping it and it might take longer but it will reach there otherwise add an extra tbsp of it ...cheers
I tried this recipe, at first I got the consistency but it wasn't quite 10minutes so I beat a couple seconds longer but then the gelatin separated from the rest of the fluff. It wouldn't flatten out in the pan and looks like lumpy mashed potatoes. I'm going to try it again but won't beat it as along. But did anyone else have this issue?
I made them yesterday but unfortenally it was a failure 😱 even when it was in the fridge overnight but I think it was just because of the wrong gelatine (I didn't have beef gelatine 😔) .... buuuut I put it into a jar and use a tbsp of it onto my bulletproof coffee 😁😇😊! Aaaand I have to say that this drove me really crazy and today I used another type of gelatine aaaaand now it looks and feel much more like yours in the Video and now it's in the fridge again and I really can't wait to see if this time they turn out like the "real marshmallows" 😁😇😊

I do not think you can use any sweetener for consistency. Xylitol is one and there is only one other, starts with an "A". Xylitol is highly toxic to cats so don't give them any. But that is why others marshmallows are not turning out.

Adjust the recipe if using agar agar, half it because she says in another comment that it is stronger than beef gelatin and recommends to half the amount - though she has not tried this personally.
I found some "low carb" marshmallows in a shop once. They were very expensive and gross, mostly because I wanted to toast them. They started on fire and smelled like chemicals. Has anyone tried to toast the marshmallows in this recipe?

I was JUST going through my mother's "Maria Mole" (ma-ree-uh maw-lee) marshmallow recipes thinking how much I miss them! We Brazilians love our sweets and make homemade marshmallows. I was wondering about making them keto and then while scrolling through your videos tonight found this! Am going to make them tomorrow! By the way, homemade marshmallows are VERY overpriced at our Farmers Markets and sell for $5 EACH, the same size as yours! Sugar is cheaper than our keto sweeteners so you could get more than $5 each. lol

Update: I did exactly the same with all same ingredients except for the sweetener. The video states "... any sweetener of your choice." We used non-GMO Xylitol. We also tried organic Erythritol & Stevia blend. Both batches, unsuccessful. Here's the payoff for being positive: I ended up adding organic unsweetened desiccated coconut AND after refrigeration... OMG my Mother's "Manjar Branco!" It's even better than having the marshmallows!!! I added a bit of heavy whipping cream and aside from not having the sweet sugary syrup for it (similar to flan), it's authentic, delicious AND sugar-free! You'd swear it's sugar-laden!!!! Thank you pretty lady! I wish I could post the pics for you! 😍🙏

Mine turned out as a jello consistent blob. Is my gelatin too strong? I whisked it for 10 minutes and tried longer, but it just turned into a blob. What am I doing wrong? Thank you!
Mary A don’t worry about it ...just melt it and try again ...you just need to reach the right consistency as shown in the video ...almost like soft peaks ....and even if it’s turned into a blob ...put it into a container and press it down as shown in the video with a spatula using a little hot water on the spatula ...cheers

These are keto /low carb marshmallows so I wouldn’t use sugar at all ...xylitol is a sugar substitute...I think coconut sugar would work too though I don’t use it as I’m low carb x

Is the sweetner powdered?
So some sweetners don’t dissolve properly with hot water and still form crystals so in that case use a powdered sweetener (this happens with erythritol ) while some sweeteners dissolve easily so use it accordingly and adjust the sweetness by tasting the water and add a wee bit more or less x

I tried this recipe, at first I got the consistency but it wasn't quite 10minutes so I beat a couple seconds longer but then the gelatin separated from the rest of the fluff. It wouldn't flatten out in the pan and looks like lumpy mashed potatoes. I'm going to try it again but won't beat it as along. But did anyone else have this issue?
Don’t waste your ingredients ….just heat it up in the microwave and start with the same again x

I made them yesterday but unfortenally it was a failure 😱 even when it was in the fridge overnight but I think it was just because of the wrong gelatine (I didn't have beef gelatine 😔) .... buuuut I put it into a jar and use a tbsp of it onto my bulletproof coffee 😁😇😊!
Aaaand I have to say that this drove me really crazy and today I used another type of gelatine aaaaand now it looks and feel much more like yours in the Video and now it's in the fridge again and I really can't wait to see if this time they turn out like the "real marshmallows" 😁😇😊

I do not think you can use any sweetener for consistency. Xylitol is one and there is only one other, starts with an "A". Xylitol is highly toxic to cats so don't give them any. But that is why others marshmallows are not turning out.

Adjust the recipe if using agar agar, half it because she says in another comment that it is stronger than beef gelatin and recommends to half the amount - though she has not tried this personally.
I found some "low carb" marshmallows in a shop once. They were very expensive and gross, mostly because I wanted to toast them. They started on fire and smelled like chemicals. Has anyone tried to toast the marshmallows in this recipe?
Dawna Pryor these cannot be toasted ....it’s more to eat as candy as they don’t have the ingredients that is used commercially which allows the toasting ...cheers !!
