I like my induction cooktop for messy cooking done outside. If I’m doing a super grease splatter meal I plug that sucker in outside and leave the grease splatter outside lol. I can’t wait to try this recipe. Great video!

I have made regular marshmallows before and they were a bit labor intensive and always sticky and difficult to cut at all but so fun....yours look remarkable and made with healthy ingredients, super easy and NOT STICKY....I have some diabetic and dieters on my Christmas list that will be so blessed with this delight......I will give it a try. Thank you so much! I hope you'll find some good stuff on here you'll enjoy. I haven't tried straight allulose, because I like the way the blends perform. I made my sweetener to duplicate Magic Baker, so it works almost exactly like sugar. If you put the same amount of allulose in, It won't be as sweet and the consistency will be softer. I can't tell you for a fact, but let me know if you try it. 😁

Ought to be fairly easy with your sweetener mix though to be sure no crystallization occurs I stick with pure allulose (and maybe some sucralose drops) for custards and curds since I usually want them to store in the fridge for a while. It would be wonderful made with that homemade (possibly double strength like I make mine) vanilla!

Single strength 2 or 3 whole beans split open (or 5-6 used/scraped) to 8 ounces booze (cheapest, vodka) or double is 5-6 split whole (or 10 used/scraped). The iffy-ness is if the beans look smaller or larger to me. Donna will have her own mix/booze and I'd love to learn it since I only started nearly 2 years ago. I use the beans once in "vanilla bean ice cream" in my Ninja Creami first, then use the scraped beans to make the vanilla. You can get Grade A beans nearly $1 USD a bean when you get 50.
Been years since I’ve made marshmallows from scratch. I always lined my pan with parchment paper, enough to hangover the sides of the pan. Greased the parchment paper well. Much easier to lift the marshmallows out the pan with the parchment paper. I’m not a huge marshmallow eater, but do like using in recipes. Always bought marshmallows for making homemade fondant. I’ve seen several keto recipes for marshmallows, but they were a lot more complicated, with multiple sweeteners. Yours is pretty straightforward. I’ll definitely give them a try. Like you, wasn’t going pay $6-$10 a bag for keto marshmallows. Marshmallows freeze well, so that’s a bonus. Just to clarify by beef gelatine, do you mean a brand like Knox gelatine??

I get mine at Walmart or I put a link for another and good one from Amazon in the description. You could use Knox, you may need slightly more. It's a pork gelatin and sets a little softer.

I did a keto grocery run to Niagara Falls NY in September. Mainly Wmart. Was able to get so many sugar free products you just can’t get here. Some are available on Amazon, at a ridiculous price. Many are not.

Its hot chocolate season here, and Tim Horton's has come out with a hot chocolate muffin filled with marshmallow cream. Is there any chance you might create something like a keto marshmallow cream? I'll bet those muffins are incredible, and I would love to replicate them, so I don't feel left out.
I have thought about it... It will take a good bit of experimenting to pull it off,v so probably next fall. You could probably bake these right in and add a little more liquid to the muffins
Be interesting to see how you make out with the creme brulee topping. From what I've gathered from other bloggers, it can be difficult to get the right consistency after you torch the keto sweetener.

@@JeanneanGreen Techie Old Lady here - They're talking on a smart phone or tablet. If you are on a computer (like me with old eyes) alt-prtscn (alt-printscreen) on the keyboard copies the active window to the clipboard of windows. Then open the version of paint that came free with windows, and paste (ctrl-V) into the paint program. Then you can save as any type of photo. You can use paint to crop the picture but don't try to resize it as it is a low resolution bitmap and will get all pixelated. It is really best to just use the mouse cursor and select the text in the description box, copy (ctrl-C) and paste it into whatever text or word processing software came free with windows, usually called Write or Wordpad. You can manipulate it there to print out on paper that can be cut down to size to be attached to an index card. I found it easier to stop using an index or recipe card and moved onto a binder to just whole punch the paper. Hope this helps!

Yes, that's what I would do. You could just do all your lows, but the sweetness wouldn't be there as much. Might put a tiny bit extra gelatin in just because the allulose will set up a little softer

I've never tried it, so I wouldn't want to tell you for sure... I would probably add a little bit more gelatin just to be safe

@@JeanneanGreen Techie Old Lady here - They're talking on a smart phone or tablet. If you are on a computer (like me with old eyes) alt-prtscn (alt-printscreen) on the keyboard copies the active window to the clipboard of windows. Then open the version of paint that came free with windows, and paste (ctrl-V) into the paint program. Then you can save as any type of photo. You can use paint to crop the picture but don't try to resize it as it is a low resolution bitmap and will get all pixelated. It is really best to just use the mouse cursor and select the text in the description box, copy (ctrl-C) and paste it into whatever text or word processing software came free with windows, usually called Write or Wordpad. You can manipulate it there to print out on paper that can be cut down to size to be attached to an index card. I found it easier to stop using an index or recipe card and moved onto a binder to just whole punch the paper. Hope this helps!

Yes, that's what I would do. You could just do all your lows, but the sweetness wouldn't be there as much. Might put a tiny bit extra gelatin in just because the allulose will set up a little softer
