I think you might have missed the fact that fern was using a spell they had obtained from the dragons nest. It let's you see throughout clothes and she was looking at Stark haha
Praise is a super important theme in this series. Not just in the religious sense, but in recognition of others' accomplishments. In our world, there's a severe lack of praise or it's given flippantly as an empty gesture, particularly for young men. This story is a refreshing and much-needed examination of the human condition that's been lacking in not just anime, but media in general. Great timing.
There was a moment whete Frieten squealed in excitement at the oppertunity to investigate the dragons treasure. You missed when you talked over it. Frieten is my favourite character in this show. You will see her true potential only later on sd well as Fern's.
Poor Frieren, she thought she had an excuse to stay and shop for grimoires for 2 years of leisurely reading and she gets shuffled right out the gate instead.

It seems to me like she did not actually underestimate Stark as she implied with the "you exceeded my expectation" but was in fact so good at judging him, that she knew exactly how long it would take for him to take down the dragon. By allowing Fern and Stark handling those things by themselves rather than serving them everything on a silver platter and being overprotective of them. Case in point: The English dub translated it as "That was quite exceptional.". I don't speak Japanese, so I'm not sure which translation is better but considering the different translations, maybe it's fair to say that some meaning could have gotten lost in the translation.
