I have used liquid food colour as it's easy to avail for everyone but u have to be very careful n not put too much or the chocolate will seize . You can rectify it by putting a teaspoon or 2 of oil or cocoa butter
I just used normal liquid food colour but I suggest u use oil based powder or colours coz u have to be very careful in as to how much u add . Adding too much will make the chocolate seize .

Wen y are layering it u can soak each layer with sugar syrup. Take the cake out 30 mins prior Or In the batter instead of putting 100 gms of butter put 50 gms of butter and 50ml of oil

Problem is in chocolate. They use some other type of chocolate
I guess the problem is if you use real chocolate and you don't temper it: real chocolate needs to be tempered.
