      Hallo... Zu verwendendes Mehl für Brot:
      Proteinwert mindestens 11,5% - 13%,
      Glutenwert mindestens 28%,
      Mehle mit geringem Aschegehalt (max. 14,5%) sollten bevorzugt werden.
      Mehl Typ 550 sorgt für eine knusprige Brottextur.
