Is there a way you know of to have print on the ribbon? A custom text for example

I think that would be difficult to do in After Effects because it's fake 3D. Stuff like that is probably easier in Blender or Cinema 4D.

Not quite if I understand your process correctly. I'm looking to animate lines that are parallel and stick together and just taper off together at the end point. I have tagged you in the demo I'm working on to show you roughly what I have in mind.
