  • Hamburger Casserole. 100 year old recipe. This video had to be re-uploaded! In this video I'll be whipping up a simple, one pot dish that is perfect for any weeknight dinner. The variations are virtually endless. It's easy a, affordable and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.
    Ingredients:
    1 lb. of lean ground beef
    1 cup of chopped onions
    4 cups of diced potatoes
    1 cup of milk
    Salt & pepper to taste
    4 ounces of Provolone cheese (or any cheese that you prefer)
    1 teaspoon of corn starch to thicken
    **Optional - 1 cup of chopped green bell peppers

    My husband is a pastor and our church had a soup cook-off to raise money for missions. I never made soup before. I made your corn chowder and raised $113.00 for missions. I came in 3rd place. Not bad for the first time. Thank you for all the encouragement you give me everyday.

    Becky, I really appreciate how you discuss how using differing ingredients effect the dish and how to compensate with what you actually have in the fridge; and how important it is to know about the timing of adding ingredients , effects your dish.
    You even offer suggestions on how to get it ready when you’re short on time and the house is hot! Becky, you are the mama or grandma that every girl wants to teach her how to cook…
    PS….I’ve got at least a decade on you, maybe more…but I’m an old cat that loves to learn new tricks, and I certainly appreciate the accumulated generational knowledge you share in your videos. ❤️

    I enjoyed the video…this is similar to my daughter’s favorite daddy meals. My no recipe, recipes.
    My ex-wife of 23yrs worked 2nd shift as a nurse and I always had supper duty when I got home.
    I love to cook and wouldn’t trade the memories of my daughter doing homework at the kitchen table
    as I cooked. They do grow up too fast though.

    I am in my 70's and was raised on this - except I just do hamburger, onions, potatoes, water, niblet corn and Worchester sauce (about 3-4 Tbsp) and cook on top of stove until potatoes are tender.

      I would add mixed veggies and Id drain the grease from the meat before adding the potatoes and veggies. I think Im going to try this.

    In Australia I’d never heard of using milk with ground beef (which we call beef mince) as we usually prepare mince with a tomato base, but having tried your SOS recipe, it’s a game changer. My kids thought it looked “disgusting”, but once I bribed them to try it, they loved it. Thank you for giving me some new recipes that can feed my family in an affordable way, as we were getting a bit sick of spaghetti bolognaise and tuna casseroles.

      @@mkd6878 biscuits for breakfast? Yeah no I won’t give my kids sugary treats at breakfast time. You do you but I just give my kids breakfast of whole grain toast or muesli and yoghurt and fruit. Biscuits would never be allowed at the start of the day.

In the US, our biscuits are generally made of flour, shortening, milk & some levening agent (baking powder), if you're not using self-rising flour. Some add buttermilk for a more flavorful biscuit. Then they are rolled out & cut into rounds & baked. In our southern states they are the most common, & served for breakfast with a white cream sausage gravy on them. The sausage is a loose, breakfast style sausage- not in links or smoked... just ground pork with certain seasonings mixed in it. Sorry if any of my fellow Americans had you mixed-up with the whole biscuit thing. When I was younger, the differences in what Australians & British folk called chips, biscuits, pudding, & a few others were so confusing to me. But then when the internet opened up a whole new world to me, I began to watch many TV shows from overseas & got educated a bit on the differences, so now I don't feel like an idiot if I happen to run into someone from your country who's visiting ours. I worked at a McDonald's when I was just out of high school, & a person from the UK came through the drive-thru & ordered a burger & chips. I could hear my fellow employee insisting that we didn't sell chips. Thankfully, I did know that "chips" were our french fries, so I managed to fix that problem. Not even my boss wanted to believe I was right until the customer pulled up to the window to pay, & confirmed that indeed, chips & fries are basically the same. Although I have heard that our basic fries are cut slightly different than most "chips" are. All the best to you.😊

    She knows what she is doing-I cooked offshore on oil rigs, and everything she says is almost verbatim from the training manuals, and the classic "Food for 50" commercial culinary cookbook, which is the Bible for caterers, along with "River Road Recipes".
    This is all you really need to know, I have seen a few of her videos, and they are all spot-on.
    She could very easily be the executive chef at a major casino.

      Melanie Cravens me too. My mother worked all day and came home and made a good hearty meal from scratch and I do the same thing. My mom is 82 and as healthy as a horse. I can only hope I’m the same at her age.

      Thank you so much for this share.... I lost my mother back in '01 when I was just 22yrs old so I didn't get alot of her recipes because she was one of those cooks that knew every recipe by heart and she measured everything in "pinches" "dashes " "smidgeon" ect...lol
      I grew up on meals like this and always like to find others who put their own take and spin. I must say I never thought to do it like philly steak & cheese flavor so tonight that's what we are having with a chopped salad!! Thanks again cant wait to see what you cook up next.     This is a wonderful recipe! I added a cup more potatoes, a can of corn drained, minced garlic, garlic salt, and 8 ounces of shredded cheddar cheese. This meal lasted my husband and me 2 days. I WILL be making this again!

      1 lb. ground beef
      1 cup chopped onions
      1-2 teaspoons of minced garlic
      6 cups diced potatoes
      1 can corn, drained
      Salt and pepper to taste
      1 cup milk
      1 tsp corn starch to thicken
      8 ounces shredded cheese, I used cheddar
      Brown ground beef, onions, and garlic. Add salt and pepper while cooking.
      Add potatoes when beef is fully cooked. Cook for about 20 minutes until potatoes are fully cooked. Add more salt and pepper after adding potatoes.
      Mix milk and corn starch while potatoes are cooking. After potatoes are fully cooked, pour in the milk and corn starch mixture. Mix everything well.
      After mixing, pour in a greased 9x13 casserole dish.
      Put shredded cheese on top.
      Put dish in a 350° oven for about 15-20 minutes until brown.
      I made it a second time after this and used 1 1/2 cups milk and 1 1/2 teaspoons of corn starch. That didn't turn out well because there was too much liquid in it.

    I made this for dinner last night.
    As soon as the fragrance of browning meat, green pepper and onions filled the air, my husband started hovering!
    This was so very delicious. As you graciously invite us to, I made some teensy alterations by adding: 1 clove minced garlic, 1 small grated carrot and ~ 1 tsp of beef bullion granules (Loney's from Canada. Very superior) which I added to the milk/corn flour slurry. I used shredded Monterrey Jack cheese. This will be reappearing frequently in my kitchen. Thank you for sharing the recipe. I look forward to using more of your recipes.

    I absolutely love your videos. I am 70 years old and I am trying to keep my mind busy, so I am trying to learn some new dishes.I also like your speaking of God.
    About 20 years ago I found out I had Lynch's Syndrome. A genetic condition that does not fight cancer. I already had my four kids, and they already had three of my grandchildren. I was going through different kinds of cancer. (I have had four different kinds of cancer. ) My prayers were mostly for my children or grandchildren. My last bout of cancer was breast cancer. But my blood work was not good, so they could not do surgery. They sent me to a different oncologist. thinking to send me for chemo. But the doctor thought to try Immunotherapy. It worked. So last Christmas I was able to turn to my family and say. There is a cure. Thank God for keeping me out of surgery, it has been two years and I have never had any more surgery

    I made this last night and omg!!! So simple, affordable and soooo good!
    I added a sprinkle of red pepper flakes and garlic powder. I also added cheddar and mozzarella because that what I had. Love this versatile recipe!

      try with a pinch of thyme and or basil. It's a classic that compliments garlic. I keep all kinds of spices on hand to keep salt down.

      I also buy in bulk so I cook hamburger up and freeze in meal size baggies so it’s less time in prepping when you are cooking dinner. Just pull out out of freezer the morning and at dinner time it’s time saving when your running around with the kids in sports scouts ect….

    I love the Hillbilly Kitchen. She makes recipes that I grew up with. Not only are they delicious and filling, but they're inexpensive meals as well. In these difficult economic times, we need to eat as cheaply as possible especially if you have a large family to feed.

    I've been doing something like this in a crock-pot with bison for months. I brown the bison first and then add everything to the pot. And I like all the decorations you've got around the kitchen.

    My mother used to make this. I am from Oklahoma but remarried 4 years ago to a Canadian man from Ontario Canada. He doesn't like the food I cook sometimes ( they do eat different than us USA people do) but I don't like eating healthy all the time and I miss the food I was raised on. I am going to make this in hope that he will like it.

      You won’t know until you make it for him. My mother had the attitude of, “Eat it or starve!” Cook what you are used to sometimes, and get him familiar with these meals. I love casseroles and one pot meals.

Although some of my recipes are very similar to yours, I wanted some “change ups”. This recipe us a family favorite, so quick and easy to make.

    This lady is amazing. I feel like I could smell this cooking. Sometimes I forget and the TH-cam algorithm doesn't kick in properly. Probably because I am usually watching/listening to podcasts 80% of the time. Anyway, love the down-home cooking and simplicity of it all in general.     Cooked this tonight for my husband and son. They gave it a 9 out of 10…My husband said he thought it needed cheese mixed with the potatoes and meat… I did have a problem… I did everything exactly like you did in the video.. They only thing I did differently was I doubled it.. I cooked the potatoes for about 15~18 mins with the meat and then cooked them for 20 mins all mixed up in the oven.. My sauce did not thicken.. Have no clue why it didn’t make the meal creamy.. Sense I doubled the recipe I also doubled the cornstarch in my milk.. It all still tasted delicious..I just wished it came out more creamier.. Cant wait to try another one of your recipes tomorrow evening.. Thank you for teaching me a new dish.. Have a blessed night..💞

      Also did you remember to drain any grease off the meat when you browned it? I screwed up a similar recipe as a new bride- thought it didn't matter. My family called it Cheeseburger casserole, added shredded sharp cheddar usually. Hubby's side added taco seasoning and called it Texas border cassarole- Cousin Holly brought it to family gatherings along with her Cowboy Bean dish. GOOD MEMORIES!

      I have made something similar for year. Better to boil the potatoes while you are Browning the meat. Then it will go together quicker. Just found that some Dollar stores have bags of peppers and onions frozen for a dollar

    I have been trying to save money and bless my family with delicious meals. I have to confess I’m 42 with 2 grown children and I still don’t know how to cook. I finally feel like I can cook and make good meals . I just hate a million ingredients and I love how simple your recipes are and how this was a one pot dish.     I grew up next door to you in Arkansas and as I have gotten older it is the most simple recipes, that I find myself craving. I was raised on evaporated milk gravy and sweet corn fresh from the farm. I was blessed to have a Daddy that was a preacher and taught me and my brother about Gods love and grace. These things are the most precious to me in life, and I think it is wonderful you are sharing your gifts and love for God with others ❤️

    My mother would make this casserole two versions of it one with ground beef onion and potatoes and second version cabbage and sausage and potatoes.

      Mom made a casserole when I was a kid of hamburger, potatoes, cabbage, and cream of mushroom soup over the top. Kind of a Pennsylvania Dutch version of this, but still my favorite.

    All of the recipes I’ve watched you make so far remind me sooooo much of my grandma’s cooking when I was a little girl. I remember always being so excited when we were going to visit her because she made such wonderful food (and memories☺️) that I passed down to my children and grandchildren. I grew up in the Ozarks and I thought everyone ate that way.😂 Little did I know, they didn’t and I had been so blessed to have that. Thanks again Becky, your channel has renewed the desire to go back to my roots and cook these wonderful dishes again.👍☺️

    We live in Yorkshire, UK. This is very similar to the food I was brought up on, wholesome and hearty home cooking, you don't ever leave the table hungry and mooching round the kitchen for something else to eat later. 😊 LIJ ..Love In Jesus.

    This just popped up in my feed today in 2023. I watched the first minute and subscribed immediately. I will definitely make this and already wrote down the ingredients I need and the things I could add. I love one pot meals as I cook for one right now and when I make these things I divide what's left over to put in the freezer so I have meals made ahead or something I can grab for lunch one day to eat at work.     We called this "stuff" because my dad was cooking at the stove and we asked "what is that stuff".
    He added a quart of home-canned tomatoes.

      I use hamburger, can of diced tomatoes, cooked elbow macaroni, and onion. I call it stuff.

    Made this for dinner. I used beef broth instead of milk. It added more flavor without more salt. I used red potatoes because they don't take near as long to cook. All done stove top. Delicious !

    I love this, and raised my kids on it, too. There are so many things you can do to switch it up. I use pasta and different cheeses sometimes. This is a true American classic.
