Ive been a chef up until recently and i have to say i really respect how passionate you are about the food. Been following this channel for ages and its great to see you getting the following you deserve.
I made it last night using leftover roast lamb shoulder. Absolutely superb! I've made curries for years but this one surprised me by the amount of oil it used, the addition of water and the length of the cooking. All new to me but the result was the best curry I've ever made and it used leftovers! Bravo!

Honestly I am now salivating after watching this lamb preparation and not sure if i will make it to the actual rogan josh.....this alone might suffice. Love it so far and cant wait to try it.
Great channel 👏. Has inspired me to start cooking my own curries at home with great success, so many thanks for the excellent videos 🙂. When using the pre cooked lamb do you add much of the sauce along with the lamb or do you use a slotted spoon to sperate the lamb away from the sauce?

Hi Latif, another legendary video and demonstration. I’ve tried a handful of recipes and the kids are well impressed. The sea bass fillets were just to die for mate. It maybe a silly question what curry dishes can I use the precooked lamb in and can you do the same for chicken as well. Your response would be greatly appreciated Fella. Cheers Andy
I've bee in Pattaya for 14 months now . The Indian food here in Pattaya/Jomtiem is not upto standards. The lamb curry I would never eat here. I wish we had this type of cooking here. I've had to start cooking curries myself. Great video. Enjoyed very much. Be back in blighty soon looking forward to a great curry, home cooked food.

Great video! Been watching loads of your uploads. I would say that I think for me your one pot ideas are best. Totally understand why you might do pre cooked meat, but for a one off meal I will follow your one pot approach. Mark.

Yeah... Possibly with a few extra bits thrown in to the mix. I've often had the same thought, but it does seem to make a pretty substantial difference. I always add a mixed curry powder these days, even when I'm also using most of the individual spices within said powder.
Hi Latif I once had a chicken liver starter/curry at a restaurant in London many years ago and I’ve never had one since I’m sure it was made with base gravy ,it’s difficult not to end up with rubbery liver,so my challenge to you should you accept is to make one ,and a chicken liver chaat ,after watching your channel as long as it’s been going I’ve come to the conclusion if you can’t nobody can ,so how’s about it

For anyone cooking this at home, skim the lamb pot and throw away the scum. Keep the lamb liquid and add to chopped carrots, onions, bay, celery and leek to make lamb stock. Or... reduce the liquid down until its concentrated and freeze in ice cube trays. Lamb flavour in a pocket, that can be added to other dishes for more flavour
@@mynameis.....9179 at the end put table spoon of oil in the pan with chopped garlic and onion when you see they turned brown then pour into the lamb curry and put the lid on ...no smell whatsoever....

Latif, thank you for your quick response. Still trying to understand. Garam Masala Is a Spice Mix. And it has all the spices, you have already added. Don't get me wrong, trying to improve my cooking skills. Thank you again :)
The whole spices were added to flavour the oil and to fry the meat in. The powder has more spices on top of the ones already added. Also, the spiciness coming from the whole spices can get mellowed down a bit if water is added so by adding the gram masala spice powder you add more flavour to the curry

Same outcome with a pressure cooker, half the time, much less cost with gas prices... reduce after the pressure.. fantastic recipe

Go to any Asian supermarket. Look it up on line, depends where you live. They usually have a great selection of pits and pans

Yes you can bro, chicken, veg, beef, seafood, whatever tickles your fancy, all same process. Just dont cook the sea food too much. Hope that helps

If you freeze it should stay longer obviously I’m not too sure however if you put in the fridge then max 3-4 days tops I think.

Mark, we have kept cooked curries for few weeks in the freezer. Fridge probably few days.
3-4 days brilliant, any longer starts to affect the taste.

The powder has many ingredients also when you add the powder it uplifts the fragrance and flavour.

Any tips on making lamb curry with a pressure cooker?
Do go through it and pick out the bay leaves and cardamom afterward, or do you just take the lamb out and chuck the rest of it?
We just use the lamb the other ingredients is just purely for flavour
