    00:23​ 재료 소개 Ingredients
    00:31​ 보울에 강력분과 중력분을 넣기 Bread flour + all purpose flour in bowel
    00:39​ 설탕, 소금, 인스턴트 드라이 이스트 넣기 (소금이랑 이스트는 멀리 넣기) Sugar + salt + instant dry yeast
    00:44​ 따듯한 물 넣기 Add warm water
    00:48​ 주걱으로 섞기 Mix with spatula
    01:02​ 거의 섞이면 손으로 한덩이가 될 때까지 반죽하기. When almost mixed, knead until it becomes a lump.
    01:26​ 날가루 없이 한덩이로 매끈하게 뭉치면 실온의 무염버터를 넣고 반죽하기 If the dough is smooth without powder, add the room temperature unsalted butter and knead it.
    02:03​ 버터가 흡수되고 달라붙지 않을 때까지 반죽하기 Knead until butter is absorbed and not sticky.
    02:27​ 반죽을 손으로 늘려보아 얇은 막이 형성될 때까지 반죽하기 Extend the dough by hand until a thin film forms.
    02:40​ 반죽을 둥글게 말아 볼에 넣기 Roll the dough round and put it in a bowl.
    02:52​ 랩을 씌운 후 구멍 뚫어 따듯한 곳에서 2-2.5배 부풀 때까지 1차 발효하기 Wrap it and make holes and 1st rise the dough at warm place until 2-2.5 times rise.
    03:02​ 손으로 찔러보아 반죽이 딸려 나오지 않으면 발효가 잘 된 것입니다 If you poke it with hand and the dough doesn't come out, it's fermented well.
    03:25​ 반죽 무게를 재어 4등분으로 분할하기 Measure the weight of the dough and divide it into 4 parts.
    03:51​ 가볍게 둥글린 후 젖은 면보 덮어 15분간 휴지 Lightly round and cover with a wet cotton cloth and rest it for 15 minutes.
    04:04​ 실온의 충전용 무염 버터를 부드럽게 풀기 Gently smooth the room temperature unsalted butter.
    04:25​ 덧가루를 뿌리고 4개로 분할한 반죽을 타원형으로 밀기 Sprinkle flour and roll out the 4 pieces of dough into an oval shape.
    04:51​ 다시 최대한 길고 얇게 밀기 Roll it again as long and thin as possible.
    04:59​ 버터 펴바르기 Spread butter.
    05:19​ 끝에서 앞쪽으로 돌돌 말기. Roll forward at the end of dough
    06:26​ 가운데를 자르기 (4개의 반죽이 총 8개가 됩니다) Cut the center of dough. There will be a total of 8 loaves of 4 doughs.
    06:55​ 자른 반죽을 조금 늘려 돌돌 말아 머핀팬에 하나씩 넣기Extended the cut dough a little bit and roll it in a muffin pan.
    07:01​ 195℃ (383 ℉) 에서 20-25분간 굽기. Bake at 195°C (383°F) for 20-25 minutes.

    선생님... 제가 이 레시피를 보고 따라한 어언 1년 가족들이 2배인 16개 분량을 만족하지 못하는 몸이 돼버려 4배인 32개 분량을 손반죽으로 하는 날이 지속되고 있습니다.... 손이 비명을 지리는거에 비례해 저와 가족들의 입은 아주 즐거워 하고 있네요 좋은 레시피 감사합니다... -1차 발효 중 쉬는 시간

    i MADE MY VERY FIRST BATCH OF cRYFFINS TODAY!!!! They will be served with a citrus salmon, a zuchini mix, & some marinated artichokes! My son & I could not wait for dinner so we split one right away----very YUMMY! I still think that her Cruffins were prettier than mine, but thanks to her Great Video---my were light & fluffy, tastey treats!!! Just do what she does you can't go wrong. I have ever increasing Rheumatiod Artritis in my hands (& elswhere), so I had to use my mixer alot, with small breaks I kneeded the dough as best I could. You can actually see the dough transform from something quite rough into something satiny, light, smooth & elastic. Just like magic!!!! Thank you so much for this reciepe, & your wonderful video!!! I am definately subscribed!!! Love & wonder everyone-----peace out & prayers. :-)

    Thanks for this recipe. I made it today. The recipe is great in conjunction with the video. This was my first attempt at making cruffins. The clear instructions combined with the video made that achievable. My only request would be indication of timing for how long to expect to knead for and approx time on the second rise. I did look at a few recipes and videos so had an idea but would be good to include. Oh, and I love that the video has no speaking. You are never going to get everybody's language requirements so the written recipe and the visual demonstration is perfect. Thanks so much. Overall, I'm really happy with how flaky they were and the taste. I know I made some beginner errors and could get them thinner and would perhaps make smaller ones but I would definitely use this recipe again. Thanks for making it available.

      The kneading is not so much about how long it takes, but the end result. They show the windowpane test, which is basically a method that tells you if you kneaded the dough enough, if you developed enough gluten. If you manage to stretch a small part of your dough until you get it thin enough so you can see the light through it without it breaking, then your dough is kneaded enough.

    Hola, saludos. Muy rica receta. Muy buena la forma de explicar, tanto en video como la escrita. Sólo quisiera agregar una aclaración, al traducir al español, se debe indicar harina común o de todo uso en lugar de harina gravitacional.

    손반죽말고 제빵기로 반죽하고 1차발효 까지 하니 간단하네요.
    밀대로 미는게 가장 난이도가 높은 과정이었어요 ㅎ
    1.5배합 해서 4개는 기본으로, 4개는 시나몬+설탕 넣고 2차 발효중입니다.
    크로와상 첨 만들어보는데 기대되요~~

    브리첼님 레시피는 항상 성공해서 이것도 처음부터 2배합으로 도전했는데 완전 잘나왔어요! 크림 넣어 먹으려고 커스타드 크림도 중간에 만들어놨는데 굳이 크림 안 넣어도 버터 풍미만으로 맛있더라구요🤩 부모님이 너무 맛있어서 다음에 또 해달라고 해야겠다시며 크러핀 명칭도 외워가셨어요ㅋㅋ

    저는 중력분이 없어서 박력분 70, 강력분 230으로 했는데 한시간반을 치대도 글루텐막이 안만들어지더라고요 그래서 그냥 대충 모양 잡고 버터 바르고 설탕 살짝 뿌리고 마지막에 위에 살짝 설탕 뿌렸더니 진짜 맛있었어요

    예전엔 재료만 보고 에이 뭐야 쉽네라고 생각했던 시절이 있었죠... 지금은... 재료만 보고 뭐지 조리가 얼마나 힘드려고 이거밖에 안들어가 라는 의심을 먼저 하게됩니다..
    +충전용 버터볼때 응 양이 좀 많은거같은데 하다가 옆에 150그램보고 어 잘못봤나 했습니다...

    따라해보려고 하는데요... 여쭤보고 싶은게 있어요^^;
    1. 제빵기에 반죽모드로 반죽해도 되겠지요??
    2. 탕종빵 반죽으로 해도 맛이 같으려나요??(탕종반죽은 1키로씩 만들게되서 여러가지 빵을 응용해보고 싶어서요^^;;)
    한국 빵집이 없는 곳에 몇 년째 살다보니.... 크로와상 너무 좋아하는데 다른 분들거는 어려워서 엄두가 안나더라고요..
    님의 레시피로 도전해보려고요^^

    좋은 영상 감사합니다 만드는데 오래걸리긴 했지만 모양도 맛도 좋아요ㅎㅎ 궁금한게 있는데요 만든 직후엔 바삭바삭하고 좋은데 하루 이틀 지나도 바삭할순 없는건가요?

      원래 하루지나면 다른 크로와상들도 눅눅해지더라고요
      에어프라이어에 돌려서 먹으면 다시 바삭해지고요
