Soft and chewy potato bread (how to knead dough) | Brechel

    Today's baking is 'Potato bread' made of boiled potato.
    This bread is more chewy texture because of potato.
    It's delicious itself and good for sandwich.
    Let's make 'Potato bread' like stunner. :)
    Potato bread (4 loaves)
    Ingredients
    250g Boiled potato
    400g Bread flour
    7g Salt
    150g Water
    90g Milk
    4 Instant dry yeast
    30g Unsalted butter
    1. Wash potato and boil it.
    2. Peel the potato when it's hot and mash it.
    3. Add yeast in the water and milk made lukewarm and stir.
    4. combine salt and bread flour by spatula.
    5. Add the yeast mixture and mix.
    6. After combining the mashed potato by spatula, knead the dough by hand to mix thoroughly.
    7. Add the unsalted butter and knead the dough until the dough absorbs the butter.
    8. Knead the dough.
    (This dough is tacky and sticky because of moisture. Don't add more the flour.
    If you have kneader, you can make the bread more easily. :))
    9. Knead the dough until thin film is formed when the dough is stretched (for about 30 minutes).
    (This dough is too tacky and sticky at the end stage. So don't worry about being sticky.)
    10. Dredge the dusting flour on the big bowl and roll out the dough.
    11. Cover the bowl with plastic wrap and poke a hole in the plastic wrap.
    12. Let the dough 1st rise under the hot water in oven or enclosed space until double.
    13. Dredge the dusting flour on the worktable and place the 1st risen dough on it.
    (Use the bread flour for dusting flour.)
    14. Cover the dough with wet cotton stuff to prevent from drying.
    Stand it for about 15 minutes.
    15. Cut the dough into 4 loaves.
    16. Be careful not to expel the gas.
    17. Shape the dough simply with dredging the dusting flour and reshape it in oven pan.
    18. Let the dough 2st rise until a half or double in same way.
    19. Bake at 210℃ for 10-12 minutes, and at 175℃ for 10-13 minutes.
    20. After the bread cool down on rack, cut it by bread knife.

    버터대신 올리브유 넣어
    만들었는데 식감도 쫄깃하고,

    이 레시피 진짜 맛있어요. 치아바타랑 비슷한거 같은데, 얘는 좀 몇일지나도 빵이 부드럽고 촉촉해서 좋더라고요.

    오늘 해먹었어요 우유 50으로 넣었는데도 실패없이 잘되었어요~90으로 넣었음 더 질었겠지요??
    저는 오븐형 에어프라이어기에 베이킹다이얼이 있어서 그거 누르고 온도 설정해주신 그대로했어요.
    완전!대성공 감사합니다^^
    참고로 베이킹에 베도 모르는 사람임돠^^

    가끔 계란을 안넣으시는 레시피가 있던데.. 설탕을 안넣는 이유야 당연한 거겠지만
    계란을 사용 안하시는 특별한 이유가 있으신가요?

      계란을 넣으면 담백한 맛도 나지만 계란을 우유나 물로 대체할 수도 있어요! 그럼 담백하고 고소한 맛은 안 나겠지만 딱히 지장이 없거든요.

    영상 감사합니다~ 그런데 반죽이 진짜 너무너무 질어서 제빵기 반죽을 40분 가까이 했는데도 영상같은 글루텐이 안나오고 성형도 안되는 수준이더라구요 ㅠㅠㅠㅠ 제가 뭘 잘못했을까요 흑흑흑흑
