It existed for about half the 19th century, reaching its zenith in the 1870s to prevent smuggling of salt and essential goods the rural population got impoverished and exploited due to heavy taxation by invaders and upper ruling class behaved like their puppets and pimps .

It's because of the social order, we are living in till now since centuries, and that is not made by us, you see there is concept of sanskritization in which lower caste people try to emulate high caste people.
The responsibility of annihilation of caste goes first those who made it.

As an "upper caste" Hindu, I am a bit embarrased to say I never thought about this. That there would be a different cuisine for Dalits due to discrimination. Of course, it would differ from one region to another throughout the subcontinent. But even so.
I've seen videos of foods from all over the world, but never knew about this.
EDIT: There seems to be a misunderstanding among some in the comments. I used the double quotes around the words some of you find objectionable precisely because they are so. I don't believe in caste. The caste system is the root cause of India's suffering for about 2000 years, if not more. Dr. Ambedkar's Annihilation Of Caste is a work worth reading and understanding.

But in my home no separate plate, food , water tea etc for those who work in our home

Thank you for showcasing the Dalits! The caste, in my opinion, has brought generations of trauma and poverty to innocent people who are penalised for simply being born into a segment of a caste over which they have no control. Moreover, the interviewee knew that the caste system is tied to religion which makes it harder to remove the caste system. I would love to go to India one day and visit the Dalit community, to dine and celebrate festivities with them.

@@DhirajKyawalmost of the vegetables mentioned here are eaten by all castes not just dalits and majority of this stuff is due to poverty endued by British rule. We were under them for more than 200 years and before that we had harsh taxes in mughal india as well.
We have been suffering and dealing with poverty since the British left. They won’t even accept their role in how the caste l system turned out and how the poverty they created played a role in this.

Reservation is still a necessity in the Indian society. Talking from a pragmatic point of view. We are already the most populous country on Earth and still growing, yet adamantly holding the place in "low-income countries" for a hot minute now. And this is unlikely to change in the distant future too. Hence we need as many prosperous, efficient, educated people as possible.
