It is a very standard recipe, so maybe that is also why there is no point in hiding. The thing about cooking in general, and Indian cooking in specific is cooking out of instinct (thus is observed such a lack of organised recipes, ingredient measuring)- it is the knowledge of the principles of cooking, mastery of their skill over the years, and cooking with love/soul that defines the quality of the food. This is also why the exact same recipes may taste different across Indian households/kitchens.

When my wife and I traveled to India, we didn't eat at the fancy hotels, we ate on the street, with the real people of India. Oh, it makes my mouth water every time I think about their food. Each person selling his food, was so proud of what he or she made, because they wanted you to come back. Food for Gods, made purely from love.

During my first trip to India, my friend and I lived in a horrible hotel as it turned out in not the best area in Calcutta. Lo and behold - it was an amazing experience. The staff in the hotel was great and I had no issue using a bucket for showering. Calcutta was an experience and India will be worth maaany more trips (so far three). And heck yes: street food for sure!!! Just be aware of old samosas in old oil…that was the only spoiler…♥️ PS: a "slum" is what? Small scale projects or council housing; it exists everywhere - just different colours and people 😉

Most of the time I saw only the bad side of the slum like how polluted it is. Never saw this part of slum, now I have different thoughts about slum. I wish people would show more good side of the slum. Huge respect of their hard work.
The only thing that gives slums negative impression is a lack of public planning and you can't even say that it's the government's fault, because the poorer migrant sections in any big cities will flock to the places that will be least expensive and they will be the least planned. By the time the government get to redeveloping the area, the areas would have been too densely populated and convincing the people to give up their only shelter and have faith in the government would have become a gigantic task.
"Everybody in Dharavi has a dream and a lot of them makes their dreams come true" this sentence makes me wanna move to Dharavi.

One of the best made, most delightful videos I have ever seen about Dharavi and its industrious residents. Now when I see the idli wala, manchurian wala and other well patronised Dharavi origin food set ups so frequently seen near most railway stations and markets of Mumbai, I have an increased respect to the efforts put in by these entrepreneurs. Respect for the Dharavi spirit !

I work in a top noch restaurant here in Belgium. I am aghast by the amount of leftovers going in to the trash everyday. The rich and the elite guests....order things and leave 1/4 of the food that goes into the trash! What a pity
@@Mrtribru69 Yes, way back in 1975, I was a young teenager and worked as a bus boy at my Uncle's Fish Restaurant. The amount of food that was throw away was heartbreaking. Many nights after we closed down, my Uncle would give me free cooked catfish that was not served, but rather sat under heat lamps for no more than an hour. I would collect the fish in a standard brown paper grocery bag and bring it home. I would eat and share this fish with my Parents over the next several days. There was nothing wrong with this food. Had I not taken it, the food would have been thrown in the trash. This just always seemed so wasteful, even for a young chap like me.
@@rockbay79 . We Indians have such a bad habit of wasting food ( the educated and the richer ones), going to a buffet counter, taking all food, almost half of it they dont eat! In many German restaurants, you have to pay more if food is left in your plate. Most of the Belgian people here do not waste food. They eat almost everything what is served on the plate. They are tourists who come here from different destinations who waste food. In an Indian restaurant in Antwerp city...they have firmly written, " Food is precious, please do not waste", " It is a shame to waste food, please take only what you consume"....it is all over the walls.

I would offer it free to whom ever wanted it because I remember going to bed hungry. I never threw anything away. Worst case scenario, I once left some food out behind the dumpster for the wild animals and felt good about it.

People were shocked when I told them that I ate on the street or in trains or by the road in villages but I was never once ill, the food is fresh and made the same day which is more than you can see in the west ! I ate oil fried onions in newspaper and cups of sugar cane juice and then a fresh mango from the tree, magic!

I am originally from Sri Lanka but living in Canada. I always love to watch lots of Indian documentaries. Because they work very hard and very strong minded people. they never give up easily. I wish if I can make idlis and vada with that educated young idli man, living in Mumbai Dharavi and get some amazing experience with kind and hard working people, who don't give up that very hard life style.

I have had idli chutney/vada chutney or dal vada chutney (one of them each day) atleast for a year in Andheri (E) by these Tamilian Anna’s and not once had fallen sick due to food. I was in awe and had respect to this Anna who was immensely hardworking and diligently consistent with the chutney and sambhar taste. Hats off to these humble hardworking guys good to see a documentary on them. 👌❤️🤟👍🙌 They are the real street food connoisseurs.God bless them.

This was wrong fact shown india has avg. Literacy rate of 74.04 % . Kerela being the state with higesht literacy rate 93.91 %. Infact dharavi is having one of the lowest literacy rate in whole Maharastra .

@Kevin Troy I admit that this is an issue. This is directly related to education and literacy rates but there is huge difference in areas which have >85 , 90 % lit. rates . Those regions are much cleaner and beautiful eg- Backwaters Of Kerala. We are commited make strides in this area through a initiative called Clean India Mission .

At first I didn't care for the older man who was selling the Manchurian dishes because everyone else was making their food from scratch, with fresh ingredients, and this man was just opening already pre-made packaged food (cans/jars/bottles/etc.), cooking it up and selling it. But when he said "you don't have to have money to eat at my stall", and when he gave the leftovers to the less fortunate/children, that REALLY warmed my heart. This lifestyle/community is truly INCREDIBLE and an inspiration.
It is.. U won't belive but its a different world in its own.. A beautiful bonding among the neighbors.
That literally happens all over South Asia and I'm sure in South East Asia too and many other places too, nothing new, its just basic sense of caring for people of your community.

Ya bro tamil people never hesitate to do blue collar jobs, they give equal importance and respect to every jobs, im from kerala here know one want blue collar jobs, every one are ready to do low income job with tip top standard and look like a mall shop keeper roughly earn 600 and most of these people never do a jobs like construction worker, painter etc even they get more than 1000 and if u are doing some blue collar jobs its impossible for you got married, exception are there like love marriage or if the women family are much poor so they may accept the guy....

@Airbus A380 everything we buy has tax included in it. Income tax is very small compared to what we pay to gov. On all those indirect taxes. And also looking at are governments they deserved to be cheated.

Software Engineer with no brains like a dodo works for the Western companies, he is being paid very less in dollars just because the conversion happens it appears to be a lumpsum amount, the so called software Engineer has no innovation doesn't understand any business and keeps coding without knowing the overall picture of the business structure so he stays in the same place with 7% increment every year, nothing to be proud in it. As per your calculation the SE just makes 6700$ per year for doing the same work as an American sometimes even more, the idli wala can't be compared with an SE.
