- Farmer's Market Vlog II: Electric Boogaloo. It's been 2 years since my last market prep vlog. A lot has changed since then. I meant to make one of these videos last year but it just... didn't happen. Some key updates to my cottage food microbakery: I got a Rofco B40 bread oven, I now proof loaves in the fridge, I make bagels now (!!!), and I take Fridays before a market off my day job solely to bake. I'm learning, I'm growing, I'm scared but I'm doing it anyway.
u can tell right away whats most of b40 owners talk about!...upper rack cooks more than the other 2!...this doesnt happen in the b20 is weird!....actually i have seen a danish dude that owns 3 b20
Interesting that the B20 isn't as uneven! I'm not sure why that would be. The more I use this oven, the more I get used to its little quirks.
You let your animals in the same space you have your food in?
They hang out nearby, but I keep them out of the area where I'm working and definitely away from the food. :)
I’m just starting my cottage bakery journey, your oven is my dream! Where did you get your bannetons from? Finding it hard to find a cost effective supplier, thank you!
Hi! Congrats on your cottage bakery!! It's taken me years to get to the point of investing in an oven. Slow growth is the best growth! I got my bannetons from amazon but I find I need to use the linen covers with them because the bannetons themselves are splintery and not great quality unfortunately. :/

I know it’s been a while, but do you remember about how many items you were able to take to market?
I have it all written down, so yes! To the first few months of markets, I took 54 classic sourdough loaves, 11 full size focaccias, 24 mini size focaccias, and 24 packs of 3 bagels each (everything seasoned and plain). Around mid-August the market starts to wind down, so I took less then. :)
