I run a small bakery (solo operation) and we sell at a weekly year round Farmer's Market. Trust me, I know the feeling of taking 1/2 or more of your product home at the end of the day. Your bread looks amazing and you obviously put a lot of time and care into it. Maybe talk to the market manager, we have a system that the market board has to approve all vendors and their products, this limits the overlap and makes for a more interesting market as the selection is more diverse, it is clearly written on your application what you make and can sell. I am the Bread guy someone else does cakes and sweets, and another pies ect, everyone has their specialty. Hopefully that helps. Keep up the great work and good luck.
Thank you! It is tough, but we control what we can and take the rest in stride. I did talk to the market manager, who assured me the regular season wouldn't be like this spring preview. And I think they took to heart what I said about what the market can support. Applications work the same way here, but I have such a narrow selection it's easy for other bakers to overlap one (which turns out to be half) of my products and affect the whole market for me. Oh well, we keep baking. Good luck to you too!
Lidia, if you're still reading these comments I'd like to say that your videos are both uplifting to me and also comforting knowing that the hells of hand mixing can be a time to bond with the process and the dough. That being said, could I ask you how many litres/gallon tub/bin do you use to mix the dough in because I have been searching around TH-cam for someone to guide me on that purchase.
Hi! I'm so glad my videos have helped! The dough boxes I have are the Baker's Mark 18x26x6 inch dough proofing boxes. I find they hold 12 kilograms of dough comfortably with room to double in size. According to google that's about a 46 liter box. I got mine from the Webstaurant store. I hope this helps! Good luck!
