উপকরণ :
গরু বা খাসির মাংস - ১ কেজি থেকে ১২০০ গ্রাম
**খাসী/ভেড়ার মাংস হলে ২ টেবিল চামচ লবন দিয়ে ডুবোপানিতে ১ ঘন্টা ভিজিয়ে রাখতে হবে।
বাসমতি /কালোজিরা চাল - ১/২ কেজি
**বাসমতি চাল হলে মিনিট ১৫ থেকে ৩০ মিনিট ভিজিয়ে রেখে পানি ঝরিয়ে রাখতে হবে। দেশি পোলাওয়ের চাল হলে শুধু ধুয়ে পানি ঝরাতে হবে।
**ফুটন্ত পানিতে গোটা গরম মশলা ও শাহী জিরা ১ চা চামচ ও লবন ১.৫ টেবিল চামচ দিয়ে আধা সেদ্ধ করে নিতে হবে।
ছোট/মাঝারি সাইজের আলু - ৫/৭ টি
**লবন ও অরেঞ্জ ফুডকালার দিয়ে মেখে ২ মিনিট হালকা কর ভেজে নিতে হবে।
এছাড়া আরো যা যা লাগবে :
পেঁয়াজ বেরেস্তা - ১/২ কাপ
মাওয়া - ২.৫ টেবিল চামচ
কাজু বাদাম/পোস্তদানা বাটা - ১.৫ টেবিল চামচ
টক /মিষ্টিদই - ৩ টেবিল চামচ
টমেটো ক্যাচাপ - ১ টেবিল চামচ
আদাবাটা - ১.৫ টেবিল চামচ
রসুনবাটা - ১ টেবিল চামচ
কাঁচা পেঁপের খোসা বাটা - দেড় থেকে ২ টেবিল চামচ
গরম মশলা গুঁড়ো - ১ টেবিল চামচ
মরিচগুঁড়ো - ১/২ টেবিল চামচ
লবন - ১+১/৪ চা চামচ /স্বাদমত
ঘি/তেল - ১/৪ কাপ
দুধের মিশ্রনের জন্য :
গরম পানি ১/২ কাপ
গুঁড়োদুধ - ৩ টেবিল চামচ
কেওড়া জল - ১ টেবিল চামচ
ঘি - ২ টেবিল চামচ
** এছাড়া সামান্য বেরেস্তা, কিশমিশ, কেওড়া ও জাফরান রং লাগবে।
চুলার সর্বোচ্চ আঁচে - ৫ থেকে ৭ মিনিট
বা যতক্ষণ হাঁড়ি থেকে রান্নার আওয়াজ না আসে।
তারপর চুলার সর্বনিম্ন আঁচে - ১ ঘন্টা ৩০ মিনিট
নোটঃ গ্যাসের চুলা হলে হাঁড়ির নিচে লোহার তাওয়া বসিয়ে নিতে পারেন।
