Probably a bit late with a comment, but I made these the other day, with coconut oil, they set just fine, but to be honest I didn't put much in, I had made 200g marshmallows (so a bit bigger than the listed recipe) and still used 20g. I think they'd stick together with no fat, if you didn't really want the fat. But the best thing, they were just magic, at a 3hr point on a ride having one of these sooooooo hit just the right spot, the hit of sweet and salt was magical. These look great! Another benefit of these over the boiled/rice cooker type rice cakes is that these have better food hygiene. Cooked rice can't be kept out of a fridge for more than a couple of hours. I'd feel comfortable eating the crispy type after a few hours in my jersey pocket.

It was very popular in North America in school lunches at at bake sales. because Kellogg's would actually print the recipe right on the cereal box. It was a way for the food companies to also market their marshmallows. It was also common to add dark chocolate chips, peanuts and raisins. Now that you've mentioned it, I think I'm going to start making it as a cycling snack, because it is true that it keeps well in all temperatures.
I'm making riding snacks for seven of us for a big ride next week into London and I have definitely added all the ingredients for this to my shopping can't wait to try it.

@@hugoed3740 depending on the ride. But I aim to eat so well on the ride that I come home feeling pretty normal and not at all ravenous. Then I have a protein shake, shower, then have something with carbs & a bit more protein. Classic would be tuna, pasta, veggies. Or chicken & rice. Or eggs on toast. But ride depending. I am more on the chicken and rice end if it’s like 5 hours with efforts, more on the eggs on toast end if it’s just a couple of hours
I've ditched store bought bars for these! So easy and inexpensive as a ride snack. Just having problems keeping the rest of my family from eating them! lol

Interesting, and slightly scary. How do they hold up on a hot day? I can see myself getting stuck to the handelbars at 35 degrees. Look after that inflammation, go steady, and you'll be back on the podium in no time.

@@tonyh1859 most sports nutritions bars are 20-40g so 35g of carbs isn’t too shabby! I have them + carbs in bottles and some haribo at the moment and I can get 80g/hr easily!

You should make some using chocolate rice krispies for a bit of variety.
