Yes, this is possible. When referring back to a specific group of ten people who have already been mentioned, you might omit the noun "people" for the second mention e.g. "Ten people were picked for the experiment. The ten had to live in a laboratory for a week."

NB: When an 'S' is used with an uncountable object, we are referring to the BRANDS/TYPES and not to the quantity. e.g. CHEESES refer to the TYPES and not to the amount or quantity. e.g. EDAM / CHEDDAR / GRUYERE / STILTON etc. are cheeses. On a restaurant menu, you'll find WINES which refer to the types of wine they serve. (I hope I'm right Mr. Rupert. hahaha)
