Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

Charcoal sexiness? Now there's two words I never thought I'd hear in the same sentence. LOL
JD, you burn sexy flames and you know it! LOL!
GrillHunx said hold my beer hahahaah
LOL!
Harry I saw you introduce this in a different video. It’s the best I have used so far. Easy to light burns hotter, cleaner and very little ash and most importantly it last longer with less wood. 👍🏼👍🏼👍🏼👍🏼
Great on any meat I've found!
I have tried almost every major lump brand you can think of: Fogo, B&B, Royal Oak, Big Block, etc., from a size consistency perspective and a clean burn with no pops on start up standpoint, this is the best stuff I've found thus far. Always on the hunt for that perfect lump chunk.... so far, this is the best I've found.
Agree w you Eric. I think its the best
Harry I tried this charcoal on your recommendation a few months ago and love it. I’m guessing folks in my area must have seen your video too since my local Ace hardware is stocking it like crazy. Thanks for sharing!
Great to hear. Hope you like JD charcoal!
Ive use kingsford mainly because ive had 2 bad experiance with lump charcoal. But since then from watching youtube vids. Ive realized ive approached it wrong. So this might be the time i gives this a try. Ty Harry.
Please try and let me know. Thanks.

Best fuel source out there period! You need coal for your WSM? This is it! You need a coal bed for your offset? This is it! It will blow you away with crazy long burn times and minimum impurities. I was lucky to grab some in Home Depot (their first year there) and even get some as a close out. Go and get yours!
Agree 100%
JD has is Cleanest burning charcoal, lovely scent/smoke
Extremely subtle smoke profile, best for chicken/fish or anything that absorbs smoke easy
I wouldn’t waste it for fast/hot cooks since you lose the smoke flavor profile after 400-500 degrees
I really like their MAXX briquettes in the 20 lb bags
@@SlapYoDaddyBBQ me too! They’re the largest /cleanest briquettes I’ve ever used and last the longest
Harry love your videos and currently use your rubs. Im liking the jealous devil video, but man, 50 bucks a bag! I currently use a mix of kingsford or royal oak and some hard wood chunks. I mainly do ribs, chicken, brisket, and pulled pork. Im trying to gauge is it worth the money. great video but tough sale at that price. I sometimes use 40 lbs of charcoal in my big smoker for an all day cook. That would be a huge cost with jealous devil
I love his passion and belief in his product
Great product. I was skeptical until I cooked on it.

Coming soon to Home Depot
@@SlapYoDaddyBBQ very excited, I'd love to see Costco carry it also, seems like a product right up their alley.

I found some at tractor supply in a box. I have to say I love it. It has surpassed in my eyes my love for RO lump. I didnt think it mattered what lump I used but my mind has changed. Great vid Harry
That is awesome Lawrence!
Jealous Devil is the best.
They use the same wood as Wicked Good Weekend Warrior.
However, the Quality Control for Jealous Devil is way better than Weekend Warrior.
I will be buying Jealous Devil for now. And maybe mixing it up with Fogo Premium.
Right on
Amazing Product! I've always used lump, but the Maxx Briquettes are the only briquettes I'll use if I can't use or find lump
My fav as they burn long and clean. Less bulk than the lump IMHO with very similar bark, color, and flavor
Would you recommend this charcoal for gravity smokers?
I recommend Jealous Devil MAXX briquettes for gravity pits
Great video Harry. It was fun hanging out with you.
Awesome fun! Hope you can make Austin for T-Roy's crawfish boil

I receive tons of "ghostsparking" with big green egg brand charcoal. Nada with Jealous Devil.
We call that charcoal spitting. Be careful when not using JD. Always have a fire extinguisher nearby
Thank you very much for sharing, great video.
Thanks Dan. Happy to add to the diversity of topics featured on my channel that you won't find anywhere else!
Great video Harry! Thanks!! Great to see a face to their product. I was skeptical too, I couldn’t figure out what the difference would be until I tried it. I was able to get a 2 bag deal back in March $80 something, no tax and free shipping!
Yes, I always say try something at least once to see if you like it. When I first ate raw fish, I thought who would eat that stuff. Well, 50 years later, I''m a sushi addict!
My question is whether it's worth the extra expense. I think it's about $46 a bag on Amazon. I guess I've just used
Kingsford Blue Label for so many years.. It's hard to pull the trigger at $50 a bag after tax.
Try a bag and see for yourself. I am no expert and I am honing my BBQ skills. I use a WSM for a smoker. My findings were interesting, to me, when using JD. The fire is definitely hotter and the charcoal does last longer. I now just use the minion method when smoking on my WSM and try to keep the fire as controlled as possible. I use less charcoal for the same burn time with JD. I use JD for the brisket and port shoulder cooks that take a longer time to smoke. For ribs and other short time cooks I still use Kingsford. There is a lot less ash with JD and I see that as a plus because I do not have to empty my ash bucket as much. FYI, I clean my grill after every use.
I purchase the Kingsford Blue Label at BJ's club and the cost is close to 60% less than JD but I still find value in JD. Try a bag and see if you can tell the difference, honestly I did see a difference in the amount of charcoal used, the easier to control temp of the smoker and less ask to clean up.
@@95SLE but what about taste? Does it produce a better overall smoke flavor than regular briquettes?
Vonky Tonk I noticed no difference in the taste of the meat.
Only one way to find out is to cook with it. I was skeptical until I tried it. Don't believe me as you can see the response from the crowd I served the prime rib cooked with JD charcoal in this video
th-cam.com/video/b-LvOzd5NiU/w-d-xo.html
I think the straight JD flavor is IMHO better than KF Blue. Just my $0.02 :-)
I use kingsford BB and I’m tired of that charcoal taste. Does jealous devil have a more mild taste??
Yes, I prefer JD by a large margin
Wow, what a great story! Thanks for sharing that. I have not seen this in my area. Do they have national distributors like chain hardware stores?
JD will be in True Value and ACE laster this year. I personally think it's a great product. I was skeptical until I cooked on it as I've used many brands of charcoal. @@SlapYoDaddyBBQ LOL You got it😂
Great interview!
Thanks lots of good info about the world of wood, carbonization, lignin, charcoal, and by-products! Thanks for watching
Great video as always. Since it burns hotter, is the theory in a WSM that you would use less fuel? I am thinking if you use less to obtain 250-275 or even hot and fast temps, that the price per usage is actually less than say KBB. Cheers from the Jersey Shore.
It burned over 26 hours. See my Weber Summit video
This is fantastic charcoal. It burns very clean. Great for backyard or competition bbq. It is pricey but it’s worth it in my opinion.

Great stuff. Do you have a "cheat" sheet for jealous devil for the wsm 22. About how much lump would you use for 15# brisket. Or 5#bird 10# pork butt. New to the game and was wondering if you had any rough amounts. So I don't use more than I might need. Or worse not put enough in. I'm sure you get this question a lot. Just trying to min. As much trail and era. Once again thank you and I love your channel
Fill the WSM22 about 2/3 full on the fire ring with wood chunks on the bottom and you're good for 6 hours which is enough time to crust your brisket, bird, and butt. After crusting, put into oven as BTU is BTU is BTU. I have 300 videos you can watch and 35 playlists.
