Cantonese Soy Sauce Stir-Fried Noodles(Chow Mein) | A Basic Chinese Dish X Mama Cheung

  • Si Jau Wong Caau Min, or “supreme” fried soy sauce noodles, is a classic vegetables and noodles stir-fry Cantonese people like to eat for breakfast or lunch.
    The noodles are popular because the ingredients are cheap, the dish is easy to make, and it’s still packed with flavor. We learned how to make it from ‪@mamacheung‬, a Hong Kong-based home chef known for her Cantonese dishes.

    This type of noodle is my favorite. I could eat it everyday if I could find enough of it where I live. Yum!! I use it to make all kinds of noodle dishes.

    It seems my tea- and tablespoons are much smaller than what is used here for reference? 1/2 of one of my teaspoons would be quite a small amount

      Those are flat-leafed garlic chives, so that fills in the garlic role with a more vegetal presence.

    An okay attempt, but the sprouts should be stir fried first for at least two minutes before adding the scallion/green onions. The sprouts should be translucent and not soo white as she has it. Only Caucasian people eat raw sprouts thinking its better for them. We Chinese cook our sprouts. Then again those same Caucasian people have made a mockery of our Tofu. I see it in English health food stores all the time, they leave them in water or out to air dry, but never once do they change the water like we do in Chinese grocery stores. That is why English people revolt in eating Tofu, because they stupidly don't know how to store it and leave it to rot and think all Tofu is like that.
