when she said “people think im crazy” about her downright flacid bananas and i laughed out loud because she’s just objectively correct. that is the IDEAL stage for using bananas in cooking. you want em to look like theyre saying “sorry, this doesn’t usually happen…” because thats when theyre at their strongest
I made banana bread with some bananas that had been forgotten in a sack that looked like the rotten ones in this video. It was the best banana bread I have ever eaten.
in that this video was eye opening to me, but as soon as she said it, it made sense. Thinking of all the old bananas i have throuwn away and how intensly they smelled. Not bad just very intense for the most part. If therefor the flavors also intensified i had thrown away still perfectly usable bandanas -_- damm it ^^

try putting some in the freezer (no skin, in a plastic bag). let em get "weird", then thaw them and make banana bread. The liquid/syrup that comes off the thawed bananas is INSANE
A part of me Is disgusted but a part of me also believes this is very educational and informative, as well as inspires one to take initiative and more inclined to try and fail and try again. Thanks!

I just saw part of the video: Rotten Food Made Delicious 😅 David Chang narrated by Anthony Bourdain. And the girl who was showing how to make kimchi had a very high and annoying voice. I almost turned the video off because of her.
I hope all the seasons will be uploaded. Some great chefs have appeared on Mind of a Chef!
