I was once a cheesebuyer for a little cafe. At one point, I was sent to a tasting specially focused on mold-ripened cheeses (Brie, Camembert, etc.). We were all invited to take (rather large) samples back, for our employers most likely, and as I recall, I helped myself quite generously. I got home, sat on the floor, and ate...all the cheese. ALL of it. I could feel the Earth sending me on a strange, fungus driven trip from below. Even though I've never eaten magic mushrooms, I knew that my planet, my favorite food, and I had gone somewhere I never expected that night.

Yeah, Josh is right. Epoisses is one of the stinkiest cheeses in the world, stinkier than Stinking Bishop. Its so smelly that many public transportation systems BAN it. You will either have to throw it away, or get fined if you're caught with it in transport. The reason why it smells so bad is the same exact reason Stinking Bishop smells so bad. Both Epoisses and Stinking Bishop are washed rind cheeses and they're washed with alcohol. For Epoisses, its washed with the region's local brandy wine. And the reason it's wet is because of the milk fat competing with the alcohol still on the cheese.

This mistake is common even in france but : Red wine with cheese is almost always a bad choice. Particularly with a tannic one like your Bordeaux. It annihilates all creamy, or lactic aromas.

As a French person, I think these fancy cheeses don't really represent the range and quality of the different types of French cheese. I would personally rather go for the cheese sold in town markets or in the mountains where they usually make fantastic cheese.
You think but you actually do not know/never tried. Laurent Dubois is a MOF (Meilleur Ouvrier de France), the selection of cheese is not made randomly and the quality really is there. Perhaps you should pursue your guesses to an investigation and try figuring out where do the cheese sold there come from. You might end up the in the mountains ;) I highly recommend you to try the roquefort which can be seen as 'fancy' but really has some added value it's not just a twist. If you do want a wide variety of cheese, you better go to that place instead of having to do a roadtrip all around France. And guess what, the cheese you find in town market in cities usually is an aggregation of multiple producers.

As another fellow baguette person, I actually agree with you, I’ve eaten fancy truffle brie worth a grand the kilos and cheese sold with bread in the alpes and I swear to god that paying 50€ for a slice of truffle brie isnt worth or even better than going all the way to the alpes tasting and savouring any random cheese made by any random producer/cheese lover😊

Je vous invite à vous renseigner sur les MOF, s'il y a bien des personnes capables de rendre justices à la gastronomie, au terroir et au métier d'artisanats liée à l'alimentation c'est bien eux. Si effectivement comme moi vous préférez les fromages classiques et bien vous les trouverez sans aucun doute au sein de cette même enseigne. The first one is interesting to me as an Iranian because we nearly ALWAYS eat walnuts with cheese. We serve walnuts with breakfast traditionally. But it's even better if you soak the walnuts in boiling water a while beforehand - makes them much more fresh and delicious.

Just a little trick : the "époisse" that you had eaten was young. It was still quite "hard" in texture. If it has been aged...you wouldn't have even tried to eat it XD

I love that you're reviewing so much things during your trip to Paris, even though I'm French I'm still discovering many things in these videos (like that secret Macdonalds menu omg) ! Other super smelly cheeses you can try (or avoid haha) are Maroilles, Pont-l'Evêque and Munster. There's also some cheeses from Corsica which have living worms inside them (yes you are supposed to eat them), so that's fun too...
Comte is gruyere, for those of us unable to have access to Comte. it seems that is only avail from a specific region of France. Same thing as champagne.

goshh i love this France series. somehow you guys just made a list-to-do for me when i reach Paris one day ^^. croissant, macarons, cheese and next fine dining. all the things i love to try.
Go to France, by all means, it's a lovely country with more to see than you could fit in one trip. But I'd give Paris a wide berth. It's super expensive, people can be rude (like most metropolitan areas), it stinks to high heaven most times of the year and not at all living up to its hype. All the places you want to see are going to be super crowded, and that's assuming you can even get in. Instead, visit the smaller towns and the countryside. Maybe rent a boat and cruise one of the many channels and rivers. There's enough castles along the Loire river alone to keep you busy for days on end. Probably will end up being just as expensive, but at least the view will be breathtaking. As for fine dining, the best food France has to offer is (in my opinion) its regional cuisine. Which is best explored when you are in that area. The Flammkuchen of the Alsace are so good, you'll find yourself overeating to the point of having to loosen your belt. Delicate seafood dishes from Marseilles are so delicious even I (and I hate fish normally) love them. And the people of France. Oh my gods, the people. Warm, open, friendly, lovely - I have nothing but wonderful memories (well, except Paris). France is (for a European nation) vast and has a huge variety of landscapes to offer. Please, don't settle for what is but a pallid glimpse. Go for the whole thing, you'll not regret it. BTW I am not French ;)
It's so short too. Would love them to have more adventures here in my city and in the country. I feel like they genuinely enjoy everything and it's fun to watch.

To explain why some cheese producers put cherries on their product, it was something to make the cheese less bitter. In the past, cheese conservation wasn't an easy task, and in a few days, your whole cheese could get a bitter taste. In the region called the "pays basque", they used cherries jam to soften this taste. And it was a success ! Nowadays, with modern way to store your cheese, you could spare the cherries, but no it's too good ! You could use onion jam too, it's quite good !
As a french who lives in the countryside, I have never eaten cheese like these with something inside. Most traditional cheese don't look like these that's all I can say.

The first one is interesting to me as an Iranian because we nearly ALWAYS eat walnuts with cheese. We serve walnuts with breakfast traditionally. But it's even better if you soak the walnuts in boiling water a while beforehand - makes them much more fresh and delicious.

Just a little trick : the "époisse" that you had eaten was young. It was still quite "hard" in texture. If it has been aged...you wouldn't have even tried to eat it XD

I love that you're reviewing so much things during your trip to Paris, even though I'm French I'm still discovering many things in these videos (like that secret Macdonalds menu omg) ! Other super smelly cheeses you can try (or avoid haha) are Maroilles, Pont-l'Evêque and Munster. There's also some cheeses from Corsica which have living worms inside them (yes you are supposed to eat them), so that's fun too...

goshh i love this France series. somehow you guys just made a list-to-do for me when i reach Paris one day ^^. croissant, macarons, cheese and next fine dining. all the things i love to try.
Go to France, by all means, it's a lovely country with more to see than you could fit in one trip.
But I'd give Paris a wide berth. It's super expensive, people can be rude (like most metropolitan areas), it stinks to high heaven most times of the year and not at all living up to its hype. All the places you want to see are going to be super crowded, and that's assuming you can even get in.
Instead, visit the smaller towns and the countryside. Maybe rent a boat and cruise one of the many channels and rivers. There's enough castles along the Loire river alone to keep you busy for days on end. Probably will end up being just as expensive, but at least the view will be breathtaking.
As for fine dining, the best food France has to offer is (in my opinion) its regional cuisine. Which is best explored when you are in that area. The Flammkuchen of the Alsace are so good, you'll find yourself overeating to the point of having to loosen your belt. Delicate seafood dishes from Marseilles are so delicious even I (and I hate fish normally) love them.
And the people of France. Oh my gods, the people. Warm, open, friendly, lovely - I have nothing but wonderful memories (well, except Paris).
France is (for a European nation) vast and has a huge variety of landscapes to offer. Please, don't settle for what is but a pallid glimpse. Go for the whole thing, you'll not regret it.

To explain why some cheese producers put cherries on their product, it was something to make the cheese less bitter. In the past, cheese conservation wasn't an easy task, and in a few days, your whole cheese could get a bitter taste. In the region called the "pays basque", they used cherries jam to soften this taste. And it was a success ! Nowadays, with modern way to store your cheese, you could spare the cherries, but no it's too good !
