Great question! Rhubarb is an interesting vegetable to compare it to. Rhubarb has a very tart flavour which is why it works well with the honey. Growing up kids like to pick the stalks and dip them into sugar to eat fresh. I'd say it is somewhat similar to sorrel as it is also a leafy plant that is tart. The difference is you can eat sorrel leaves where rhubarb leaves are toxic.
