Very true! The alcohol % is not low: My favourite Limoncello recipe (by Dario Bressanini): 1) Wash very well ~4 non-treated lemons (ones that have edible zest). Then peel them: You can use a potato peeler, but peel only the zest, avoid the white part as it's bitter. 2) Weigh the zest and multiply by 2.5: that is the weight of 95% (190 proof) clear food-grade alcohol to add. Write down the weight of alcohol used. 3) Infuse the zest in the alcohol for just 1-3 days (at ambient temperature, higher temperature = faster). Use a glass jar, NEVER plastic as the Limonene - the main essential oil of the lemon zest - can dissolve plastic and then you drink it. Cover the glass jar with aluminium foil and place it in a dark cupboard. 4) Filter out the zest. 5) Add sugar to the alcohol, a quantity between 1/2 and 3/4 of the weight of the alcohol from step 2). It won't dissolve, don't worry. 6) Add water to get the desired alcohol percentage/proof. Usually start with the same weight as the alcohol (step 2). It should get cloudy when you add the water, meaning you have many essential oil molecules! And the water will start dissolving the sugar. Feel free to add more water and more sugar if it's too strong. 7) Bottle it and leave it in the freezer 1-2 weeks to have a smoother aroma. 8) Enjoy ice cold, straight from the freezer in shot glasses. I tried it a couple of times and tastes very very good!

2) Weigh the zest and multiply by 2.5: that is the weight of 95% (190 proof) clear food-grade alcohol to add. Write down the weight of alcohol used.
3) Infuse the zest in the alcohol for just 1-3 days (at ambient temperature, higher temperature = faster). Use a glass jar, NEVER plastic as the Limonene - the main essential oil of the lemon zest - can dissolve plastic and then you drink it. Cover the glass jar with aluminium foil and place it in a dark cupboard.
4) Filter out the zest.
5) Add sugar to the alcohol, a quantity between 1/2 and 3/4 of the weight of the alcohol from step 2). It won't dissolve, don't worry.
6) Add water to get the desired alcohol percentage/proof. Usually start with the same weight as the alcohol (step 2). It should get cloudy when you add the water, meaning you have many essential oil molecules! And the water will start dissolving the sugar. Feel free to add more water and more sugar if it's too strong.
7) Bottle it and leave it in the freezer 1-2 weeks to have a smoother aroma.
8) Enjoy ice cold, straight from the freezer in shot glasses.

Other venetian aperitifs Ginger col bianco (White wine with gingerino), Bianco con l'Aperol (white wine and aperol) or simply a glass of Lugana or Prosecco.
I learned to love Campari in Mexico. Summers here in Northern Chihuahua are miserably hot, but Campari & Soda with Grapefruit juice or Orange juice is very refreshing.
