This reliable and homely pudding is essentially an American version of a fruit crumble. As such, it can be used with any fruit that you would usually see in a crumble. I have gone for Apple and Blackberry because we have cooking apples in the garden and have been picking blackberries from the hedgerows nearby.
We have added mascarpone to the topping which you don't always have in a slump but you don't need to if you'd rather serve with cream, ice cream or even custard.

Ingredients
------------------
For the slump topping
85g butter
200g self raising flour
50g caster sugar
finely grated zest of a lemon
150ml milk
For the fruit (these amounts cane approximate)
450g cooking apples (such as Bramleys)
250g blackberries
25g butter
85g caster sugar
250g tub mascarpone
