I appreciate that you show how to hand mix your cakes. When I was in culinary school my first month of school they had us only hand mix our cakes, meringues, whipping cream, ect. It was to show us what a cake looked like done correctly and how you can fix it. It was torture but it built character.
I like that she shows all the mess ups, lets face it we all do stuff like that when cooking. I was making tuna salad one time and it was suppose to be a hard boiled egg and for some reason I put in a raw one, thankfully I had not put in the mayo and just made tuna patty's instead. Things happen.
And at least they caught it, as well. I've mixed up lines on recipes I know well, because I just glanced at them, and put the wrong amounts of liquid ingredients before. Oops.

thats really cool, plus i like they way you don't edit out the mistakes it makes it so much more enjoyable to watch and makes it feel more real if you know what i mean, compared to these other videos where its so edited and pin point perfect its not as fun to watch as yours are. :)

I feel you might benefit from a few tips... ;) 1. start creaming your butter alone to make it softer, then add your sugar in portions: mix, add more sugar, mix... 2. egg "one at a time" means: one egg, mix smooth, one more egg, mix smooth, so that your batter gets smooth, not with little pods of sugar-butter like yours did. BUT - that being said, #2 matters more or less with your cakes, as we can clearly see it's a stunning success nonetheless!! :D
That cake looks so lovely! Glad you caught the little misstep with the baking powder. I once did something similar. The recipe called for two teaspoons of baking powder and I wasn't paying attention and had the quarter cup in my hand from the last ingredient and I bassically put half a cup in the cake. I didn't catch it until i was two late and the cake was baking, lol.
I love the fact that you don't use the mixer, because I don't have a mixer and even I aan do all the cake recipes that you make. please continue to use the spatula, and I love you

Hey Becky, don't worry about those little quirks. My Auntie is a trained chef and when we were kids she came over and made these incredible apple pies, we were like your pugs wairting. Anyway when finished she covered them in (sugar), we all got a piece and all spat it out. It was course salt not sugar. We laughed and she cried. So even the top chef's fluff it at times. I made a Victoria Sponge cake at school once. I put the icing sugar in with the eggs instead of normal sugar. It came out of the oven hard as a brick and even the tin had to be thrown away!

+Melystle yes a lemon cream would work well mix whipped cream with lemon curd only (prob not the juice not done that before unsure what it would do to texture) and that creates a lovely lemon cream

lemon juice will almost certainly curdle your cream, lemon curd plus lemon zest sound like the best idea! also be careful with adding fresh berries/fruit to your whipped cream, some are very acidic and will curdle or are too juicy and will break up the cream.
This video was great! Hahaha. Btw if you stir your vanilla bean seeds into a bit of granular sugar before adding it will separate the seeds for you to keep them nice and even.

I have sadly made the mistake of adding salt instead of sugar. Was making a triple batch of Jam Drops for an event. No idea how I managed to get the sugar and salt confused. Learnt my lesson. Thank goodness for taste testers before the event.

That's what those grainy bits are, and once you have gone too far, there is no fixing it. On the other hand, showing people two different ways to make their own butter would be fun and fast. First, just take 8 ounces of cream and either hand whisk or use your beaters until you have a blob of butter in buttermilk. You can also take about 4 ounces of cream and pour it into an empty 16 ounce water bottle with ridges on the side. Put the cap on and shake hard for about two minutes, and you have butter. Just pour it out into your hand, ball the small bits together, rinse it with cold water, then gently squeeze all the water out. Making butter is a fun project for kids too. One ingredient and almost instant gratification. Love your videos. I've seen them all.
if it's just slightly overwhipped, you can pour some fresh cream into it and save it from turning to butter but as +Miss Karla said, once it's gone, it's gone :D

When scraping a vanilla bean, it's easier to use the back (dull) side of the knife, keeps it from catching, and makes it easier to grab all the seeds.
