So weird fun fact, but regarding the European egg thing @47:00 minutes eggs can be kept at room temperature and remain safe for consumption so long as they have never previously been chilled. Once you chill eggs they can no longer be kept safe to eat at room temperature due to the condensation that forms on their shells when they warm up. That condensation forms a perfect microbial breeding ground and as the egg warms up its shell expands ever so slightly, allowing the microbes entry into the egg itself.

Plain eggs can last a month (maybe more? I haven't tried) out in the open as long as you turn them over 1-2 times a day. In germany, most eggs cartons have dates on it for "put in fridge after" additionally to "best before"
Eggs in the us are washed as part of the pasteurization process to eliminate/reduce salmonella. Salmonella is a heathy gut bacteria for chickens--which have a cloaca. If washed, you can safely eat and handle raw egg (eat cookie dough/runny eggs if a piece of shell gets in). In europe, not fully cooked dough/cakes/eggs can give you salmonella. Similar to milk in a bag vs milk refrigerated in a carton.
The eggs you get from the store in mid-europe are not refigerated, and not washed (too much). They are usually “clean” but can have bits of dirt and things stuck to them, so you have to wash it before you use them
