An easy fix for the problem with the sharp edges after blending:
-First of all I recommend using a larger blend distance like 5-20 pixels
    - Now after blending, and getting the white text in front of the blue shadow, expand the blend (Object, Blend, Expand)
    - Now use pathfinder to unite the drop shadow into one shape
    - Use the pen tool to delete the extra unneeded points by pressing on them -- the reason we had a large blend distance is to make this stage easier; if it was only small there would be lots of points to delete at this stage.

does this only work with text? I imported a PNG of a logo and tried it and when i went to object/blend/make, the make button wasn't active and could be used...

I believe this only works with vectors, not rasterized images like a PNG. If the logo is simple enough, you might be able to image trace (object > image trace > make and expand) then follow these steps,

When i try to "drag" the shadow, I end up just moving it over. Also, when I try to scale it down it makes the entire shadow smaller instead of making one side smaller. Any idea what I'm missing? Thanks for the awesome tutorials!

Double click at your blend object (your shadow) and you'll enter to isolation mode, then click on your text below and you would be able to drag and scale your shadow c:
