      Before his strokes (when this video was recorded of him) him and I could take 500 to 600 lb of fish from the holding tanks to prepped to chill in the walk-in in one hour. Now that he has had his strokes we can knock out around 400-500 a hour.

    In response to everyone that has said he should of killed it, the man in the video is my father and i can tell you that the catfish was electrocuted before it was cleaned. It is nerves that is still causing it to move, while washing them you can hold onto the fillet and feel the nerves still moving it around just as when you fry frog legs they will kick and try to "jump" outta the pan.

      Thank you Jarrett for clearing that up. I agree with nikolas that wyatt needs to chill out and in addition to that, I think he needs to check himself ethically. I am an avid hunter and fisherman, and I would never want to cause needless suffering to an animal... it's wrong and inhumane. It's people that think it's okay to do stuff like that is the reason people who don't hunt and fish think we're all senseless killers that have no regard for an animals life, or even life in general.

    Wait, I followed these directions for my pet catfish, and he is NOT clean! He was cleaner before I started. So was my kitchen! I should have just wiped him down with a damp sponge. He's just laying on the bottom of his tank now too

    This is at The Fish Market in Elizabethtown, IL. It's a restaurant that floats on the river just off the bank. Ate there many a time since I was a kid. Great food!

    I've eaten several times at the E Town floating restaurant and you get a choice of pond raised or river caught catfish.. Nobody eats the pond raised...
    It's neat when boats pull up and tie off to come in and eat.. It's an experience that's amazing and the food is delicious!!!!

    People who can work through a fish that fast boggle my mind! I grew up exclusively catch and release. Originally I though it was because my family was super conservation minded, but my mom admitted to me years later it was because nobody in my family could clean fish well.

    The technique was good. But I would recommend bleeding the fish after caught. Maybe it’s a confirmation bias but I feel that it takes away that strong fish flavor and isn’t as messy.

      When they clean 2000-4000 lbs a day it gets a little time consuming to “bleed” each fish. Saves time and an extra step to just was them thoroughly as you see him do in the video.

      Is it really necessary for all types of cat fish to be bled first? Or is it only apllied to a certain specie of cat fish?

      The cheeks and belly is cleaned off of flatheads but not on blues and channels because of the fact that blues and channels are scavenger fish where as a flathead is a predator fish. The meat tastes completely different with a flathead bs the other two. Awesome question though sir!

    My grandpa used to catch, clean and cook his own catfish. After he passed, I've never had catfish nearly as good as his. I miss it and I miss him dearly.

    3:18 doesn't do it justice. I come from northern Dakota, we do pike and walleye by the boat load! I started fileting as a young boy of six. And we always do the dinner scene!

    We been catching lots of channel Cats here on Lake Borgne lately. One thing my pa used to do is always whack em with a 2x4 before dropping them in the icebox. They dont gasp for breath when you filet them! This guy does it for a living and has probably been desensitized is all I can say to the folks who are upset.

    if the fish was still alive it would jump and squirm when the knife was inserted just like a worm is when it is placed on a hook. the fish is dead and nerves are causing the movements

      Why? I'm obviously not a fisher. Looks to me like that thing was still breathing and alive when it was filleted, I could be wrong, but 00:49 looked like it was repetitively trying to breathe. Does this have something to do with it?

    Ok I have a true story from my childhood. My father came home one day with a catfish he fought hours before. Well, he starts filleting the thing and it wouldn't stop breathing and kicking. Me being a kid I asked him to kill it so it wouldn't suffer, he said the heart is out its right there! The damn thing had no guts no heart and no meat left on it but was still moving!

    Only other thing I do is bleed them out first, makes cleaner fillets. Cut the gills they bleed out in about 20-30 seconds, that way they aren't alive when you fillet them either. Also remove the large vein that runs through the fillet if pretty easy to see in cats that size it's about the size of pencil lead only white.

    Last catfish I cleaned I for sure thought was dead, but halfway through gutting him he jumped out of my hand and swam away with his guts trailing behind him! Dont clean your fish over the lake lol

    When he's removing the skin he's slightly angled up to take off the fat. He also removes the mud vein. If you're frying fish there's no reason to bleed it out. He's already removed any possible fishy taste.

    Anyone heard of satisfying videos?(Not porn). It's the weird stuff where a person slowly slices soap, taps their fingernails, rake sand, or whatever stuff that is supposed to be oddly relaxing. My gf watches that stuff, and I never understood it. The crazy thing, is I'm getting the same sensation from watching skinning and fish cleaning videos. Problem is I want to be the one doing the slicing. Run the blade along the bone, trim the fat. I suppose that's just my particular form of OCD.

To evbody asking why he didn't "kill" it first, I know in my heart if u ever eat catfish,you go directly to the person who cleaned it and asked " how was it killed?" You people need to get over yourselves. Go to a slaughterhouse and watch how beef is prepped,or pork...then go order a 100 dollar steak,and see if you can tell how it was processed.     I run lines every year and clean many many catfish you need to kill the fish properly. Electric shocked my ass it’s still breathing. I know what a dead catfish look like and that was a live fish being sliced open you can’t even put a knife through the head first? Then bleed it so you have clean meat

    If you cut its tail right after catching it, it bleeds out and there's no fishy smell or flavor..

    This is a major production company that filmed this and I had to take a Dramamine half way thru because of all the shaking and zooming and awkward camera angles. Wth. I just wanted to see the fillet technique not a close up of either dudes face or angles from behind them etc. Next time just keep a steady camera angle on the fish being filleted. Thank you.

    Q: Why didn't they bleed it... the meat is so much nicer if you do so.

      His secret weapon is to WASH the fillet after you clean them and cut the red out of the center of the fillet after washing and your fillet will taste better then you could ever imagine. He cleans enough fish that “bleeding” them would add even more time onto the many hours of standing, rocking, sliding around all with a really sharp knife. He cleans these fish in a floating building so any boats that come by or a decent wind causes them to rock quiet a bit.

    You lose less meat when you nail the fish's head to a board, slice around the neck, and pull the skin off with some pliers.

      complete waste of time dude. the way he does it is the best I have seen. it's also the way I do it except for I chop the tail fin off about an inch above where the fin starts. and hang them up by the head for about a half hour to bleed them out. much tasty'r and not as messy.

    If he bled the fish beforehand he would have a much cleaner filet and wouldn’t have an iron taste or a bad fishy taste to the fish.

      The fillet is all that is kept on blues and channels but flatheads the rest will be taken off as well. Blues and channels are scavenger fish but a flathead is a predator fish and the taste is hugely different.
