      Hmmmm, find you a nice decent size creek or river and walk it till you find a beaver den, then just sit there and watch, lol... We are ate slap up with them at my grandmothers house, and we all live in Georgia..

      Depends on what they were feeding on. The ones I tried had a very strong pine flavor. Other than that, it's pretty mild and reminiscent of beef. Native people where I was really liked eating the the tail, but I couldn't eat it - it's like eating gel.

      With the exception of the pine thing, I second JohnnyMac401. Much like beef, I like to grind mine and make all the same recipes, especially beaver pasties with homemade gravy, mmmmm.
      While I understand some think of it as a delicacy, I never did care for the tail. It will have small nuggets of meat and lots of collagen, similar to a pork hock. It can yield black oil when rendered whole, or a mighty pretty leather.

      Eastern which is what they consider the best are only averaging about $9.83 and topping and $37.00 for high end. Honestly it's not worth making a big trap line. Me and my dad had a 100 mile trap line about 10 years ago before the market started to fall out. Otters are only averaging $23.00. I miss when they were $180.00+

      The ulu looking knife is a Benchmade Nestucca cleaver and the "normal" looking knife is a saddle mountain hunter, also made by Benchmade

      Everything in nature is important, by hunting we are ascending the place of the observer and becoming an active part in our natural world. There are limits on almost every animal to make sure they don't share the fate of the passenger pigeon.
