For those of us who live too far north (in the US) to have access to fresh ripe pomegranates (and ripe pomegranates are not shiny but very dull looking) there are commercial juice companies that sell pressed pomegranate juice and that juice can make an excellent pomegranate wine - without the bitterness caused by the pith. That said, pomegranates can be quite bitter if the wine has no residual sweetness, so if you ferment the wine dry (to 1.000 or lower) then you might want to stabilize the wine and sweeten it with sugar or some other sweetener (perhaps pomegranate syrup or honey)...

You gave a very good advice at the beginning. Pomegranate skins are sometimes used to colour hair. So it can leave permanent stains on bright coloured clothes.👍 Also addition of grapes is another good advice. Nowadays I add 20-25% grape juice in every kind of wine for yeast nutrition.🙏

Yesterday I bottled the wine, it has an alcohol content of 14,5% and the taste is strong but quite good. It's the first wine I tried to make and I'm very satisfied with the result. Now my question is: At the bottom of my fermentor, there was this thick layer of whitish sediment - is this yeast? I collected it, as I saw you do in another video, but is it actually still alive? Do you think I could still use it as a starter in other wines or for baking bread? I thought the yeast would die when a certain alcohol content was reached.

I don't think it's lacto fermentation that makes pomegranates high in antioxidants. In general, pomegranate is one of the highest antioxidant foods there is. Only wild blackberries, or other dark berries are higher when it comes to fruits. Blueberries are actually lower. I don't think grapes beat any berry.

If it doesn’t start, open the fermenter and mix very well with a big spoon, from the bottom to the top. Probably you need to oxygenates the wine at the beginning

I also noticed that when I made grape yeast before, it also took some more time it wasn't like your yeast video after 24 hrs. Maybe the grapes that they sell in the stores here in California are different or it takes a little longer for the yeast to start the process or maybe the air is not so abundant when I use one of these glass fermenters. Anyways, hope my wine will taste good. And thanks for the great channel that you have. My pancetta is super good too. Cheers!

If you have a wine yeast you can use it or adds a grape 🍇 1 is enough
