    That’s an excellent authentic recipe, but the standard Japanese diet has too much salt, and too few vegetables to balance a protective amount of potassium. More potassium than sodium is protective. You can be thin, and still die from metabolic syndrome, and cardiovascular disease from eating too much sugar, and too much salt -versus too little potassium and fermentable fiber (vegetables).

      The Japanese diet has far more vegetables in its diet than the typical North American diet. If one simply looks at the Japanese vs American population the healthier diet is easily discernible. The Japanese diet is abundant in fermented foods.
