    The correct way to dip the noodles is 1/2 to 3/4 way into the dipping sauce.

    Going to make this! My question is "How do you slurp the noodles without flipping droplets of sauce all over your face and shirt?" I've read that the slurping is the proper way to eat noodles in Asian countries but growing up in the USA I'm obviously clueless.

      Hahahah I’d say distance between face and bowl is what prevents the droplets. But that’s my theory 😂

    if you add dashi stock, why would you need to steep in more bonito. you're essentially just making more dashi stock which you already added in the beginning

      Because then the noodles get too soft. By dipping you get the taste and the firmness of the noodles
