In Maharashtra we make “vangi bharit” which is almost similar except we again cook after adding all the ingredients (no capsicum instead spring onions and either red chilli powder or green chilies chopped ).

U can also roast it in the oven for 25-30 mins & then broil for 2-3 mins. I personally like a tablespoon of homemade hummus without tahini in it, added to make it creamier! Purely a personal taste. Thanks for sharing;)
This is same as choka of litthi choka where even the tomatoes n onions are charred. Also here mustard oil is added instead of olive and instead of pita litthi is eaten.
