Best tool to scrape out eggplants is a silicone spatula. And if you don't really like the taste of fresh garlic, wrap the garlic in alu foil and bake them together with the eggplants. No need to clean the cloves, they get soft and you can squeeze them out. Roasted garlic has a mild nutty taste, just lovely.

I happened to your channel and made this for my family today. It was easy. When they saw I bought an eggplant, they were saying nooo, I can`t wait for tonight when they think it is from hummus and I spring it on them! Great taste and easy !

I usually buy a platter that comes with Falafel, baba ganoush, Hummus, Tabouli, Kibbeh, Stuffed grape leaves, and rice pilaf from the Lebanese restaurant near my house but my wallet has been going through some distress lately 😅 so I'm definitely gonna give it a go and make it from scratch at home. I am trying this right now! Just put the eggplant in the oven, I've made this for years but stopped because I was always disappointed by the appearance. The color would be too dark and unappealing. Just a fun variation that I like doing is roast a bulb of garlic coated with a little olive oil and wrapped in foil the use that instead of the raw. Raw garlic is great but roasted tends to be a little milder. Either way, you be you.
is it possible to fill it in jars and keep it longer...maybe a few months ?? that would be useful during off-season when the eggplants are extremely expensive.
All good But I pierce the eggplant with a fork all around and then grill it on my stove all around then I put two peeled garlic with salt and crush them into a paste then I add tahini ( sesame seed paste ) and usually I squeeze lemon 🍋 but I find white vinegar gives it a even better taste and mix it all together then decorate with olive oil and chopped parsley around it 👍🏼🇱🇧❤️🇦🇺
For me, I personally don't like blending the mixture into a completely, fine paste that which kinda looks like chocolate ice cream. I like very small chunks and eggplant to give that texture and that BITE.
You can find the tahini at Middle Eastern markets, natural-foods stores. Most large supermarkets now carry it as well, often located with other Middle Eastern ingredients or in the peanut butter section.
All middle eastern grocery stores have it. Superking is one of them. I am not sure where exactly in California you are, but we have them here in southern California

Skip salt and use a good quality olive oil.
Also, don’t overroast the sesame, since it will turn out bitter.
It taste awsome, small variant for me, I prefere just to squash the eggplant with a fork, I prefere that texture. Thank you very much.

I do this too - firing the eggplant skin over the flame before baking. Gives it an extra smokiness that’s amazing.

Thank you! You can definitely remove them to temper the bitterness too.
Both - tahini and olive oil have to be used for proper Baba Ghanoush. Also, kumin is needed.
