Most neapolitan pasta do not just use ketchup - they usually add a bit of tomato paste/tomato sauce in the mix with some herbs or salt or parsley as well. every japanese household has their own recipe but they definitely season more than just ketchup.
The editing has gotten better in every video. The side by sides this time were so awesome and so spot-on. I love this series, definitely going to watch your other videos now!
A little advice, you should cut de pepper the other way around, outside the pepper is slippery, is easier to cut yourself that way, if you cut it from de inside, the nife will not slippe. PD: Saludos desde uruguay c:

Plus, this dish was actually invented using the ketchup brought over to Japan by American soldiers after World War II. If you use a regular tomato sauce, you will make a nice tomato pasta, but it won't be a true Napolitan, which definitely uses true ketchup. The dish is sweet, but that's why most Japanese think of it as children's food - you would never see an adult order Napolitan in a restaurant!

Since I haven't seen anyone say it yet: Tim, I'm concerned about your cutting technique on e.g. the onions and peppers. I can see that you have the right idea by tucking your fingers under, but the way you are doing it is potentially slippery and dangerous as you are not actually gripping the item being sliced. The proper technique, as you can see in any number of cooking tutorials on TH-cam, involves holding the food in place with all five fingers, while keeping the thumb in the back and out of danger and tucking just the last (closest to the fingertip) knuckles on each of the other fingers behind. The knife will therefore be maintaining contact with the last knuckles the entire time, and the fingers will be safe from the blade while the food is held securely in place, preventing dangerous slippage. Cooking Mama's hand position in the game is anywhere from merely exaggerated to downright incorrect---it's hard to tell---but for you in real life, Tim, I strongly recommend switching to the safer version. Keep up the great work man, I love your channel and have been watching from your earliest cooking mama videos.
Having eaten this dish in Japan I was sort of tilting my head at the comment about sweetness. So out of pure curiosity I checked sugar in a random bottle of Japanese ketchup vs the Wegmans you have on screen. The Japanese ketchup had about 16g of sugar per serving, while yours had 23g. Both amounts are in 100g servings so I'm not sure how noticeable the difference would be in practice. If you try this again maybe try a reduced sugar or no sugar added ketchup. These tend to have about 1-2g of sugar per serving. I prefer this stuff for omurice but I haven't tried making spaghetti neapolitan with it. Thanks for the fun videos!

One trick you can use to make cutting raw meat like that a lot easier is to stick it in the freezer for about 20 minutes to a half hour before you slice it. Makes the outside a littler stiffer so it holds it's shape better.

A good substitute in this case would be tomato sauce and perhaps a touch of soy sauce. You can find a few Asian brands of ketchup at places such as Vietnamese or Indonesian food markets. Tricky for small towns, but worth looking into. -Since it's really difficult to toss food in a frying pan without spilling everywhere, you could use tongs instead of a spatula! You have more control over where your food goes, and it makes mixing noodle dishes really easy.
