  • Ermine frosting, also known as boiled-milk frosting or flour frosting, is a light and creamy frosting traditionally used for red velvet cake but can be used on any cake or cupcake. Its unique characteristic comes from the process of cooking flour and sugar with milk to create a sweet, thick roux, which is then beaten into butter.
    The name "ermine frosting" is thought to have come from the frosting's similarity in appearance to the white, velvety fur of an ermine, a type of weasel.

    Red Velvet Cake:
    100g All Purpose Flour
    10 Cocoa Powder
    3g Salt
    5 Egg Yolks
    65g Milk
    50g Oil
    2g Instant coffee (optional)
    1/2 tsp. Vanilla Essence
    1 tbsp.Red Food Colouring
    5 Egg Whites
    120g Sugar
    1 tsp. Vinegar (optional)
    Ermine Frosting
    150g Sugar
    90g All Purpose Flour
    3g Salt
    480g Milk
    1 tsp. Vanilla Essence
    500g Unsalted Butter

      The baking mode that I usually use for my baked goods involves the top and bottom heating elements without the fan. Nevertheless, you should follow the baking instructions from the recipe you're using. For example, if you're following a recipe from a US-based TH-cam channel, they probably use convection mode or broil.

    Hi Micheal I just made this cake, when baking do I need to turn on the oven fan or no fan, I made it with fan on maybe that's why it's not as soft. But the boiled milk frosting is very nice. Thanks for sharing.

    You can replace beet juice for a healthy alternative. This way you don’t consume chemical.

      Certainly, if you're using beet juice in place of food coloring in your red velvet cake, you'll need to slightly adjust your recipe. Beet juice adds extra liquid, so you'll have to either reduce other liquids in your recipe or add a bit more dry ingredient to balance it out.

    Did you cut the sides of each layer, again when you filled in sides with buttercream? I noticed a gap there for the filling?

      No, I didn't trim the cake. I used an 18cm pan to bake the cake and then a larger pan for the frosting.

      This recipe is for a pan size of 18cm. I used a 20cm cake ring to frost the cake.
      For a pan size of 22cm, you can add 50% more ingredients.
      For a pan size of 24cm, you can double the ingredients.

The flavour might be slightly different as well, as cornstarch doesn't have the same taste as flour.
      Generally, if the flour, milk, and sugar mixture is cooked properly in the process of making ermine frosting, it shouldn't leave a floury taste. The cooking process helps to eliminate any raw flour taste. However, make sure to cook the mixture until it has thickened to a roux-like consistency and then cool it completely before adding it to the butter. This will ensure that the flour is fully cooked and integrated, resulting in a smooth, sweet frosting without a floury taste.
      Remember, when substituting ingredients, it's often a good idea to do a small test batch to ensure you're happy with the taste and texture before making a larger batch.
