Country gravy is just a few simple ingredients but is in NO WAY simple to make! You, sir, show the TRUE and southern way to make country gravy! It took me a many a time watching my granny make this and several failed attempts of my own before I learned how to make this food of the Southern Gods! Thank you Sir!

I don't make white gravy very often, in fact I just learned how to make it for myself last year. This'll be about my 5th or 6th time making it tonight. I saved my bacon grease from sunday just for tonight. Chicken fried steak happening

I want to first say I have watched you channel since you posted this video 3 years ago. I am from Ft Worth and you make homemade gravy exactly like my mom does so I know your technique is true Texan. What I want to tell you is that I just watched thus again and I wanted to tell you I despite the TV background noise and other imperfections I think this is one of your best videos. I watch all of your videos and have tried several of the recipes. You might want to go an re-watch this one and see the Magic I am talking about. I don't know exactly what it was but it really good watching.
    Anyway keep em coming.

The white gravy turned out great - please serve it a nice white gravy boat, or just leave it in the pan; please don't put into plastic - presentation is half of the goal. But, other than presentation - well done OldManCooking! Good job on the spice (cracked pepper and salt); BTW: gravy stores in the fridge better than most would think; as do biscuits or grits or hominy! If you do make grits, please use half-and-half and-or some milk and be sure to buy Nebraska Grits, they are the best! Keep up the good work OldManCooking!

This is basically the same recipe as all of my kin and people in this region use. One big difference that's came with time however is the use of about half the volume of milk, and the other half evaporated milk. These days I only use straight milk when we are out of evaporated milk! When you start using part evaporated milk, there's no turning back!

I think a roux is normally equal parts fat and flour. Certainly not a hard rule though. As you said, the real determining factor is the amount of flour to your total liquid.

Yeahhh I think I can, I think I can..but I haven't yet,but I'm gonna..I do have 1 simple question. If by chance I happen to feel my gravy is a little runny..Can I add a pinch of flour as I'm cooking and stirring to thicken it up ? It looks perfect like you did it. I'm just saying iffin' I don't do it right..or if it's too thick, can I add a pinch of milk to thin it out. Have you ever pinched milk ?

OldManCooking Thank you for your help :-) I'm not trying to be a pain in the rump, but in the video you said 1 cup of milk. In your written description you listed 1 1/2 to 2 cups of milk. I'm bound to fail at this rate of milkage...Not pointing out a mistake.I just wanna know which before I make one..LOL..Oh and I cook a lot with olive oil. Will olive oil work okay ?

There is a lot more oil in the pan than you think. More than 1/4 cup. Usually equal parts of oil and flour will not flow this readily. It doesn't matter though. Oil-based roux's are like that, anyway. AND it is your recipe.
